Sarah’s Salad

by Jamie
This is a wonderful salad that is very easy to prepare.
I do not know who Sarah is!
She’s most likely some lovely pioneer lady, since the recipe comes from The Lion House. I spent many an evening mixing this salad up when I worked there. The ingredients are very basic, but have a fabulous taste when combined together. I have adapted the original Lion House recipe to include a bit more bacon and cheese, and a little less lettuce.
I dare you to say that fast three times.
While you say it, think of how grateful you are for more bacon and cheese and a little less lettuce.
This actual bowl full of salad was prepared by my lovely friend Heather, for a shower we helped to host a couple of weeks ago.
She is not a pioneer.
She does however make Sarah proud each time she makes her salad.
Heather is a non-pioneer salad maker extraordinaire. Mother extraordinaire, friend extraordinaire, creative lady extraordinaire
…what can I say.
She is someone I would be sad to live without.
Don’t tell her I said it, she’s pretty shy about how great she is.
Sarah’s Salad
Yield: 8 servings
3/4  head iceberg lettuce chopped
5 strips bacon crumbled
1/2   -10 oz package frozen peas
1/2 t sugar
1/2 t salt
1/4 t pepper
3/4 C Swiss cheese sliced
2/3 C chopped green onion
1/4 C Miracle Whip Salad Dressing
1/4 C Best Foods Mayonnaise
1. Chop up the lettuce. Put it in a large mixing bowl. Put the peas, green onions, and cheese on top.
2. In a small bowl combine the Miracle Whip and Best Foods. Add the salt, pepper, and sugar and stir until well mixed. I like to complete these two steps and then put them in the fridge until it’s time to serve up this pretty little treasure.
3. Just before you are ready to serve the salad add the dressing mixture and bacon to the the lettuce, cheese, peas and green onions. Mix it all up with a large pair of tongs. Enjoy!
