by Jamie
Oh, my summer lovin’ friends!
Do I have a series of great recipes for you this week. These wonderful Sesame Noodles are first on the list. They come together very quickly really. You can make the sauce in the time it takes to boil the noodles.
OOOO…. AHHHHH……
that sound like a nice idea doesn’t it. If you are finding yourself wrapped up in a heat wave, never fear. These lovely noodles won’t heat your house up much at all. Come on back tomorrow and check out what I like to serve with these tasty noodles.

Ingredients

  • 4 T soy sauce
  • 3 T brown sugar
  • 2 T sesame oil
  • 1/2 T peanut butter
  • 1 t  hot chili oil
  • 1 T olive oil
  • 1 T white sugar
  • 1 small can mushrooms, chopped
  • 3-4 green onions, chopped
  • 1/2 T sesame seeds
  • 1 16 oz package Capellini Noodles (or thin spaghetti noodles)

Instructions

1. Cook pasta according to package directions.
2. While your noodles simmer away, add all ingredients but the mushrooms, green onions and sesame seeds, into a large mixing bowl. Stir them all up nicely so they are incorporated well.
3. When the noodles are done cooking, pour them into a strainer to drain all of the hot water. Immediately add the noodles to the sauce. Add the mushrooms and sesame seeds and stir it all up. Sprinkle with the green onions and you are ready to serve, folks. Ready to serve, and eat, and serve, and eat...and just ready to enjoy the summer time!

What is hot chili oil and where would I find it in the store?

Marianne,
Hot chili oil can be found in the Asian food section of most grocery stores. I couldn't find it at my local Walmart, but Smith's (Kroger) carried it. Good Luck!

have you ever tried throwing broccoli or green beans in these? (that way I wouldn't have to worry about a veggie). . .hmmmm–maybe I'll just try it. . .

Melanie,
I haven't tried adding other veggies, but that sounds delish. It would be great to make it a one dish meal. Let me know how it turns out!

I loved this. Served with the asian grilled chicken. I didn't have the chili oil, but I used a few spoonfuls of chili garlic sauce and it was amazing!

Love, love, love this recipe! I make it once a week and make a big batch so I can have leftovers. It’s my 5-year old’s most requested meal. She likes it with some grilled kielbasa and roasted asparagus. Thanks for sharing!
