Ice Cream Sandwich Bar

This pretty little lady just happens to be my daughter.
Anna. 
Anna the sweet, the funny, the kind hearted, 
soon to enter the hallways of junior high…
girl of wonder. 
She had a birthday this past week and turned the ripe old age of 
Twelve
If you are tired of reading about all my children and all of their blah blah birthdays….never fear. 
We are nearing the end of our family birthday season. 
Pat yourself  on the back….and put your feet up
 we have made it through another year.

Anna wanted to do something a little bit fun and clever for her party this year. Thanks to a wonderful blog I love to read called

There are many wonderful party ideas, recipes and beautiful inspiration to be had.  
We made three different kinds of cookies for our 
Ice Cream Sandwich Bar. 
Sugar Cookies 
Recipe at the end of this post. 
 
and Double Chocolate Cookies.
Recipe at the end of this post. 
 
Prior to the party we scooped our ice cream out onto cookie sheets and then kept them in the freezer 
until we needed them for the party.
Let it be know that MyHandsomeHusband thought this was
“A big fat time waster and why didn’t we just put the tubs of ice cream on the table and save ourselves 15 minutes.”
I kindly reminded him that this party was about
Fun and Clever and Cute Presentation. 
This is sometimes difficult for HandsomeHusbands to relate with. 
Just giving you fair warning……
 
We also set out a number of topping the kids could roll their 
Ice Cream Sandwiches in. 
Crushed Oreos, Nerds, mini M and M’s, mini Chocolate Chips 
and chopped nuts. 
Then the building began…
And some fun creations were born…
And they seemed to be having fun…
Did you know that crazy and LOUD things happen when you invite boys to a girls birthday party?

Double Chocolate Cookies
Time: 1 hour
Yield: 36 cookies 
Recipe from Jamie Cooks It Up!
2 boxes devils food cake mix
1 C melted butter
2 eggs
1 12 oz bag white chocolate chips
1. Pour your cake mix into a large bowl or your stand mixer. 
2. Melt the butter and pour it on in. Mix for about 30 seconds. 
3. Add your eggs and mix until all ingredients are combined. 
4. Add your white chocolate and mix for 30 seconds. 
5. Roll the dough into 1 1/2 inch balls and place them on a cookie sheet sprayed with cooking spray. 
6. Bake at 350 degrees for 7 minutes or just until the cookies crack along the tops. Take them out of the oven and let them continue to cook on the hot sheet for several minutes. 
7. Remove the cookies and place them on a wire rack to cool completely.


 

Crinkly Sugar Cookies
Time: 1 hour
Yield: 48 cookies
Recipe from Jamie Cooks It Up!
1 C butter, softened
1 1/2 C sugar
2 eggs
1 t vanilla
1 t almond extract
1 t butter flavoring
3 C flour
2 t baking powder
1 t baking soda
1/2 t salt
 
1. Cream your butter and sugar together for at least 2 minutes. 
2. Add your eggs, vanilla, almond extract and butter flavoring. Beat the mixture for another 2 minutes or until everything is nice and fluffy. 
3. In a separate bowl combine the flour, baking powder, baking soda and salt. Just fluff it around a bit with a fork or wooden spoon. 
4. Add the dry ingredients to the creamed mixture and mix until combined. 
5. Roll into 1 1/2 inch balls and place on a cookie sheet that has been sprayed with cooking spray. 
6. Bake at 350 for about 7 minutes of until the tops of the cookies start to crack. Take them out of the oven and let them continue to cook on the hot sheet for several minutes. 

7. Remove the cookies and place them on a wire rack to cool completely.

What a fun idea! This would really be fun for any kind of party. Maybe I'll plan a just because party and have an ice cream sandwich bar. That sounds like so much fun! Because I'm lazy (er…..curious) do you think it would work to peel Thr cardboard off the ice cream and cut it into slices instead of scooping it? Hmmm…. Anyway, thanks for sharing the fun idea. Happy birthday, Anna!

Hello Jessica:),
I wondered if cutting the ice cream into slices would be better as well. However by the time we got the ice cream scoops in the bowls and everyone was served they had softened up enough that they easily spread out to reach all of the insides of the cookie.
