Pumpkin Spice Muffins

Don’t look now…but this recipe is made with 
Whole Wheat Flour
I am not even joking here. 
These muffins are moist, flavorful, packed with raisins and pecans and can be made in just about 30 minutes from start to finish. 
They would be perfect to make for a weekend breakfast, 
or even as quick bread to add to dinner. 
Let’s make them, okie doke?
Pumpkin Spice Muffins
Time: 10 minutes hands on +15 minutes baking
Yield: 12 muffins
Recipe from Jamie Cooks It Up!
 
2 C whole wheat flour
1 C brown sugar
1/2 t salt
1 t baking powder
1 t pumpkin pie spice
3/4 C canned pumpkin
5 T melted butter
1 egg
1 C milk
1 t vanilla
1/2 C raisins
1/3 C toasted pecans
1. In a medium sized bowl combine the flour, brown sugar, salt and baking powder and pumpkin pie spice. Toss it all together with a fork. 


2. In a separate mixing bowl combine the canned pumpkin, melted butter, egg, milk and vanilla.
3. Pour the wet ingredients into the dry and mix just until combined. 


4. Add the raisins…


and the toasted pecans and stir just until combined. 
5. Spray a muffin tin with cooking spray (of line it with cupcake holders) and spoon the batter into each cup.
6. Bake at 350 degrees for about 15 minutes or until the tops of the muffins spring back when lightly touched.

could you use white flour and not wheat?

Yep…white flour would work fine as well.

Your instructions say to add vanilla, but it's not listed in the ingredients. I figure a tsp or so, but just thought you'd like to know so one day when your cookbook is printed…

Would walnuts work just as well as the pecans, or should it really be pecans?
