And now, without further delay, I have a lovely recipe for you today.  As I mentioned in yesterdays post, I’ll be sharing several recipes and ideas this week perfect for hosting a wedding or baby shower. 

These Waffle Cone Fruit Cups with Vanilla Cream couldn’t be simpler to put together. I chose to use strawberries, grapes and kiwis. You can, of course use whatever fruit you wish. They make for a pretty display and my guests seemed to really enjoy them. As did my twin boys who said “Wow! Thanks Mom! That is REALLY cool fruit!”, when I handed them a waffle fruit cup to eat while they sat in the sunshine on the back porch. Yes, you heard me. It is sunny here in Utah. Happy days are here again. Cool fruit and  sunshine…you can’t really beat that, can you? 🙂

 
Waffle Cone Fruit Cup with Vanilla Cream

Time: 15 minutes
Yield: 24 servings

***NOTE: Fresh fruit, after it has been sliced, tends to get all juicy and runny. These cups are best prepared just before serving. Also, I used Keebler Waffle Cones for this recipe. I found them at Walmart for around $2.50 a box. 
 
Fruit Cups:
24 waffle cones (2 boxes Keebler Waffle Cones)
2 pounds strawberries
5 large kiwis
2-3 pounds grapes
 
Vanilla Cream:
1 1/2 C vanilla yogurt (I like Yoplait)
3/4 C sour cream
1 T brown sugar
1/2 t lemon juice (bottled works fine)
 
 ***NOTE: The black and white floral basket liner, as well as the purple liner are actually just plastic table cloths I purchased at Walmart and Dollar Days. Then I cut them up and used them to line different baskets and bowls, to add a little color and fun to the party. The ribbon and tulle tied to the side of the basket is also from Dollar Days. Everything in the store costs one dollar, my friends. Makes it nice and cheap to make a party look pretty and fancy.
 
1. Place the waffle cones carefully in a large basket.
 
2. Slice up the fruit and distribute it evenly between the cones.
 
 
3. In a small bowl combine 1 1/2 cups vanilla yogurt, 3/4 cup sour cream, 1 tablespoon brown sugar and 1/2 teaspoon lemon juice. Stir it around with a spoon until all ingredients are combined.
4. Add a dollop of the vanilla cream into each cone.
Serve and enjoy!

      They are really best made just an hour or two before hand. The juice from the fruit will start to leak through the cone if they are left to sit for too long. Best of luck!
