I have a fun little giveaway today sponsored by Del Monte. This fine company is hosting a Crown The Cook Facebook Cooking Contest. Participants are required to enter an original recipe using one or more of Del Monte’s canned fruit, vegetable, or tomato products.  If your recipe is selected as one of the top three finalists, not only will you win a year’s supply of Del Monte® products*, but Del Monte will send you and a guest on a four day trip to San Francisco to compete in a cook-off against two other fans! The grand prize winner will take home the title of Del Monte Cook-Off Champion, as well as thousands of dollars worth of professional cookware. Mine are veggie quesadillas made with any veggies I have on have such as zucchini, bell pepper and onion with melted sharp cheddar cheese fried in a flour or corn tortilla. Yum!

My recipie is not necessarily the quickest but it is the easiest and gets the best reviews from anyone that has it. I brown some butterfly pork chops, remove them and add a packet of Lipton Onion Soup Mix, can or jar of beef or pork gravy (whatever I have on hand), fill can/jar with water and add to mixture, stir it up and add long quartered potatoes and the pork chops back in the pan. Simmer until the potatoes are cooked through. Done. You can thicken the gravy if you'd like but normally my family doesn't. Easy Peasy!

I don't have a name for it, but I cook 1 box of 5 min couscous (I like Near East's roasted pine nut), heat 1 can of black beans (low or no sodium), and dice an avocado and tomato (or 1 can diced tomatoes works). Serve the couscous topped with the beans, then add avocado and tomato. Quick, easy, and relatively healthy. sarah{at}rothwell-enterprises{dot}com

Our fam's quick go to meal is soft tacos. I make a bunch of taco meat when I do it & freeze portions of it to use when we need to — making it even quicker & easier! (especially with ready made tortillas & buying shredded cheese too!) 🙂

My next door neighbor fishes almost everyday and is kind enough to share his catch with me. One of my fave go to dinners is fresh fish, redskin potatoes, garlic bread and salad. Easy and yummy.

Baked potato with sour cream and light salt on top or I go for the standard white cheddar grilled cheese with a tomato soup. 🙂

My go-to is Mock Chicken Pot Pie. Two cans of Cream of Chicken soup in a stock pot, take 4 boneless-skinless chicken breasts, boil until cooked, cut into cubes and return to pot. Then take chopped onion, a can of potatoes and can of sliced carrots and a can of peas and add to the mixture and cook until hot and onions are cooked through. Pour into a 9×13 pan, top with sliced buttermilk biscuits cut in half, and bake in a 350 degree oven until biscuits are brown (about 10 minutes).

My go-to meal is baked chicken with a jar of salsa dumped on top. About 10 minutes before it's done, I sprinkle some shredded cheese on top just to melt. Serve over rice with a dollop of sour cream!

Our family's easy go-to meal, like many others here, is tacos..but often just with whatever we have on hand from leftovers – so sometimes bbq chicken – or bbq pork, maybe even shredded beef, topped with salsa, cheese, sour cream and then grilled together in a skillet almost like a quesadilla!! Delicious and easy!!!

Taco soup is definitely one of those easy go-to meals for us. It's always tasty and it's so easy to make, with most things almost always on hand!
