I brought something simple to share with you today, my friends. Because I know you like simple. And I know you are running around town having fun this summer, enjoying all that the season has to offer, which may leave you with less time to tinker around your kitchen. Am I right, or what?
This is a wonderful crock pot recipe, passed onto me by my dear friend Tricia. The ingredients are simple yet packed with flavor. Hope you enjoy it! Hope it gives you a little more time to play with your kids, or grand kids, or whomever you’ve got around to enjoy and love in your life. 🙂
Creamy Ranch Chicken with Garlic Mashed Potatoes
Time: 20 min. prep + 4-6 hours crock pot cooking
Yield: 6 servings

Creamy Ranch Chicken:
5-6 chicken breasts (I used frozen)
2 (14 ounce) cans cream of chicken soup
4 T butter, melted
2 (1 ounce) packages Hidden Valley Ranch Salad Dressing Mix
4-5 cloves garlic
Roasted Garlic Mashed Potatoes:
7 large russet potatoes
4 T butter
milk
salt and pepper
1. Find yourself a nice crock pot. Spray the inside with cooking spray and place 5-6 chicken breasts in it. (I used frozen)
2. In a small bowl combine 2 cans cream of chicken soup, 2 packages ranch mix and 4 tablespoons melted butter. Spread it over the top of your chicken.
3. Peel your garlic and place the cloves on top of a sheet of tin foil.
4. Wrap the foil around the cloves and up into a nice little package.
5. Place the garlic package in the crock pot on top of the chicken. Cover the crock and let the old girl cook away on low for 6 hours, or on high for 4 hours.
6. When your chicken has cooked through carefully take the tin foil package out of the crock pot and set it on a plate.
7. Peel your potatoes and chop them into chunks. Boil them for about 15 minutes, or until fork tender and then drain the water out of the pan.
8. Mash up some of the roasted garlic and add it to the potatoes. Just start with a small amount of garlic, maybe 1-2 teaspoons. You can always add more, if you want it really garlicky…but you don’t want to overpower it.
9. Add 4 tablespoons of butter, salt and pepper and a bit of milk. Beat the potatoes until light and fluffy, tasting along the way and adding more salt and pepper or butter or milk or garlic to your own very personal liking and desire.
Serve the potatoes with the juices from the crock pot and the heavenly Creamy Ranch Chicken.

Thanks Jamie for the yummy dish! I usually make something similar to this but with pork chops. I’ve never thought to try it with chicken (my hubby prefers chicken). This was delicious!
Absolutely delicious!! The chicken was so moist even after 4 hours on high. Also, due to a tight budget I used all store brand products. Even the ranch dressing mix was the Kroger store brand. It was perfect. It is a new, cheap and easy family fav!

We had this yesterday. It was fantastic. My picky two year old kept asking for me. I used the Western Family brand of Ranch dressing and it made it really salty. I’ll have to try Hidden Valley next time. Also, I didn’t see the need for the butter in the cream sauce. Have you ever tried leaving it out? Does it still turn out?
I’d blame the saltiness on the cream soup….try getting the salt-free soup.
Putting the ingredients together now. Sounds like something my family would love.
I didn’t see any heat settings or time limits so I am going to go with Lindsay’s four hours on high. Will get back to you on the finished product.

In the Av- Mode, the Settings are always T=1/8000 and F=1.0. Can you combine the ingredients all in a ziploc bag and freeze if for a while before making it? My baby girl is due in 8 weeks, so I’m trying to find some good freezer/crockpot recipes to prepare beforehand so we don’t have to worry about cooking! Thanks =)

It freezes well with pork chops I haven’t tried this recipe yet but I make it with pork chops and freeze it all the time. It reheats very well.
I don’t have dry mix but I do have ranch salad dressing. How much of the dressing would I use in place of the mix?
I wouldn’t trade the salad dressing for the dry mix package. It’s the spices etc. in the mix you want…the salad dressing would be too watered down to have all the flavors.
Can I use a whole fryer chicken instead of chicken breasts? Would I need to go six hours instead of four hours? Gonna try this tonight.
I just came across your site a few days ago. My son (30+ yrs old)has been visiting me and I decided to try your Creamy Ranch Chicken out on him. All day he’s been looking at the crockpot and saying, “I don’t know about this, Mom…” and was very skeptical. I am glad to say, not only did he like it, but he had extra helpings! I thought I had bought ranch dressing mix, but didn’t. To make up for that, I used 2 packets of Italian Dressing Mix. The chicken took longer to cook than I expected, (OLD crock pot),but it was delicious. I served it with yellow rice instead of the mashed potatoes and what a hit this was! I’m looking forward to trying some of your other recipes! Thank you!
Do the chicken breasts go into the crockpot frozen or do you thaw them first? If they go in frozen do you cook them for longer? Thank you for your help, I am new to the crockpot.

You can add them frozen if you like, and yes you will need to up the cooking time by about an hour. Good luck! So glad you loved the bars. 🙂

Can you use the ranch dip mix or does it have to be the salad dressing mix!

The ranch dip mix is a lot more potent than the dressing mix. I would stick with the dressing. Good luck!

Quite salty, but extremely easy and good. I did not add any salt to the chicken and will look for salt-free cr.of chicken soup next time.
You mentioned you use frozen chicken- did you mean it was frozen when you put it in the crock pot? If so- does frozen chicken cook through in the 6 hrs on low?
