Homemade Caramel Sauce

by Jamie

To say this Homemade Caramel Sauce is fabulous would be The Great Understatement of The Universe. It honestly would. It’s hands down the best Caramel Sauce I have ever made. It’s rich, thick and creamy! Just what I love in a Caramel Sauce. It reminds me a lot of the Caramel Sauce they serve at a local Ice Cream shop here in Utah called Leatherbys. Have any of you heard of it!? There is one close to my parents home and we used to go there when I was young. I would ALWAYS order the Ice Cream Sunday with Caramel Sauce. Because it’s the best thing on the menu. Cross my heart and hope to die. THE very best. I’m thrilled to have found this great recipe that tastes so similar. Additionally, it is VERY easy to make requiring only about 10 minutes of prep work. I am going to try really, really hard not to make it every day. 🙂 A girl has to have her limits you know. Pass the cucumbers, I may have consumed more than my fair share.

Make this sauce, my friends!

Make it and put it on ice cream, drizzle it over apple slices…or pour it over a cheesecake or something, won’t you?

Let me show you how to make it happen…

1. Find yourself a medium-sized sauce pan. Pour in 3/4 cup white sugar,

3/4 cup packed brown sugar,

1/2 cup corn syrup…

and 1/3 cup butter.

2. Turn the stove to medium heat. Stirring the ingredients together occasionally, allow the butter to melt and the sugars to dissolve. Keep stirring it now and then so it won’t burn, and be sure to keep the heat on medium.

3. When the mixture comes to a full boil (it should take about 5 minutes to get there), then remove it from the heat and let it cool for 5 minutes.

4. Add 2/3 cup whipping cream. Whisk it in, until all ingredients are well combined.

5. The caramel will be pretty thin but will thicken up as it cools. I actually prefer it at room temperature…I like my sauce nice and thick. 🙂 It’s fabulous on ice cream or as a dip for apples.

Store leftovers in the fridge for up to a week.

Enjoy!

Whoa! That DOES look just like Leatherby’s! They have this thing there called Gretchen’s Golden Nugget which I dare not ever order, because it is basically a big waffle bowl overflowing with ice cream and homemade caramel in equal measure. I know there would be some kind of blackout situation and I’d come to my senses in the middle of a crime scene, only with caramel splattered all over me instead of blood. (Sorry to say “blood” on your lovely caramel post.)

Aaanyway, I’m printing this recipe right now to take home and try over the weekend. Well done, Jamie!

Definitely on the make it soon list. LOVE Leatherby’s caramel sauce. My husband and father-in-law eat it straight from the spoon – no ice cream or fruit required! Our stake just had an adult date night with ice cream from Leatherby’s and Adam finished off the bowl of caramel sauce!

Okay, made it! It is DELICIOUS and, indeed, very similar to Leatherby’s. I’m sorry to report I could not find the half pint of cream I was sure I had in my fridge, so I used buttermilk instead since I’d already gotten everything else out. Still wonderful with the buttermilk and actually a lot lower in calories. And it’s so easy to make that I don’t even think I need to go to Leatherby’s anymore. Which makes me feel a little sad as I’ll miss the thrill of looking at that terrifying family photo on their menu with those strange ladies and their Tron hair, and that one blond guy with the teeth who looks like he’s going to come out of the picture and attack.

Five star recipe for sure. I can’t wait to lay some homemade caramel sauce on my family next weekend at Mother’s Day. Thanks!

Jamie: Thanks for this recipe. Would you please help me!?! I made this last night because I thought it’d be a GREAT, easy idea to make for Teacher’s Appreciation Day. We of course had to try it-ya know to make sure it was ok (wink-wink)-and it was gritty :0( There was great flavor, but I imagine that it’s suppose to be smoother than mine turned out. I followed the recipe exactly but am guessing I didn’t let it boil long enough? I was worried about burning it. Can you help me so I can make a new batch today? Thanks so much for any ideas!

Erin,
Thanks for your question. Sorry your sauce turned out gritty. I would suggest letting it boil just a bit more. Also, if your Brown Sugar is old and dry that can cause it to be gritty as well. Hope this helps…Better luck next time!

I can’t believe you mentioned Leatherbys! We had one in Auburn, Ca (Northern Cal)! I would order the black & tan with chocolate and caramel sauce with homemade whipped cream! I haven’t had anything since and unfortunately it closed down years ago..:(
Anyway, I can’t wait to try making this delicious looking caramel sauce!

Hey! looks very very very delicious but I have a question: is it possible to make it without using corn syrup? if so can I get the same texture?

Dilek,
I would keep the corn syrup, it’s an important component. Good luck!
