Make Ahead Breakfast Sandwiches

With Christmas being next week, I wanted to offer up at least one “make ahead” breakfast idea that would save you a little time on the big day, while being super delicious in the process. These fun Breakfast Sandwiches are fabulous, gang. Truly, my family was dying over them and asked me repeatedly why I hadn’t ever made them in the past and when would I be willing to make them in the future. 🙂

They only take about 30 minutes to prepare and can be made 1-2 days in advance. Weather you are having guests over for a holiday brunch, or are just planning on hanging out around tree on Christmas Morning with your immediate family, these Breakfast Sandwiches would be perfect.

Let me show you how to make it happen!

Make Ahead Breakfast Sandwiches from Jamie Cooks It Up!!

Serve This With

Classic Orange Julius
Banana Peanut Butter Smoothie
Simple Skillet Breakfast Potatoes
Waffle Cone Fruit Cup with Vanilla Cream

1. Preheat your oven to 400 degrees.
2. Into a large bowl crack 14 eggs. Add 2 Tb milk, 1/4 tsp seasoned salt and some salt and pepper.

3. Whisk it vigorously with a fork. You want it to be kind of frothy.

4. Spray a 9×13 pan with cooking spray and pour the eggs into it.

5. Bake for 15 minutes, or until the eggs puff up and are cooked through.

6. Allow them to cool for about 5 minutes, then cut them into 12 rectangles the same size as your croissants.

7. Grab some pre-made croissant rolls. I opted for the mini version.

8. Add a slice of egg to each one.

Top it with some ham and cheese.

I split each cheese slice in half, placing one part under the ham and one part over it so the melted cheese would help to secure the ham in place.

It helps speed up the process if you cut them all, then add all the egg, then all the cheese ham cheese.

9. Spray a 9×13 pan with cooking spray and place the sandwiches inside.

10. Cover tightly with tin foil. Pop it in the fridge until you are ready to serve.

11. Pre-heat your oven to 400 degrees. Pop the covered pan into the oven and bake for 15 minutes or until the sandwiches have heated through and the cheese is melted and wonderful.

Ingredients

  • 14 eggs

I tried the overnight sticky buns at my parents a few years back – the gooey stuff overflowed and I set my mom’s oven on fire -my dad had to put it out with the extinguisher, so needless to say we opted for something else to eat!!! LOL! Haven’t tried them again…

I have started making Freezer Almond Cranberry Buns. You can make them and freeze them before baking. Just put them in the fridge overnight for baking the next day. Pretty popular around here. They can be frozen for up to one month.

So sorry, Lynn. I’m not sure which recipe you are referring to. I haven’t ever posted a recipe for freezer almond cranberry buns (but they do sound pretty darn tasty!). I should give them a try.

Made these for Christmas breakfast and loved them! My family and extended family couldn’t get enough of them. I made half the sandwiches with ham, like the recipe states, and the other half I used precooked sausage patties. Both ways were great! Thanks for a fantastic recipe.

I made both the Make Ahead Breakfast Sandwiches and the Breakfast Potatoes last night for a “Take Them A Meal” drop off this morning and dinner for my family tonight. These sandwiches and potatoes are beautiful and tasty. I plan to warm the potatoes along with the sandwiches in the oven this evening. Just a couple of notes. In order to get the eggs frothy, I used a mixer. To protect the buns from moisture in the fridge I put a piece of cheese on both top and bottom. For the top I used American and for the bottom I used thinly sliced sharp cheddar. I have shared your recipe on facebook and via email. Thank you for sharing it with us!

How long will these stay good in the fridge? Will they keep for 4 days? Or can I freeze them to make them last that long? I am planning a baptism breakfast, but we are going to be at a family reunion for the three days immediately before that, so I am trying to plan ahead!!!

I haven’t ever tried freezing these, but my thoughts are that it would work out well. I would suggest wrapping them individually in foil. My friend Cindi actually made a bunch of these for the Girls Camp we attended last week. She didn’t freeze them, but made them 2 days in advance, wrapped them all in foil and then we reheated them (in the foil) in a dutch oven. You could easily reheat them in an oven. I think it would work out well. They really freshen up when they are reheated.

I have made these two years running, and will again this Christmas. I use Hawaiian rolls though. They are so easy and so good. I might make extra just to keep at home this year and freeze for daily breakfast!

These were a perfect addition to the brunch I hosted this past Sunday! So easy and I have to admit I was a bit skeptical how they would be after sitting in fridge overnight but they were perfect to pop in oven the next day. I made half of mine on mini croissants and the other half on Hawaiian rolls. I did bake mine on a cookie sheet because I doubled the recipe and needed the space. All in all they were perfect!

These look fabulous! Do they freeze well? Probably depends on the croissants. I had thought about making a batch and baking them as needed on my way in to work.
