Several weeks ago I had my son Marks priest quorum (youth group) over for a little cooking class. Marks leader asked me if I would teach the 16 and 17 year old boys how to cook something easy and simple since they are knocking on the door of adult-hood and will be living away from home in a short time. A small fact that puts a little bit of fear into this mama’s heart. 🙂

We had a great time at the cooking class. I opted to teach them how to make a quick 5 minute omelet. It turned out to be a great choice, as I have witnessed my boy Mark making himself an omelet no less than 7 times since we had the class. It was a lesson well received, thank goodness! I have limited time with this boy, you know.

I thought maybe a few of you would like to see a step by step tutorial on how to make a fabulous, quick omelet as well.

Here you have it…

4. Take a small skillet (I like to use and 8 1/2 inch pan) and heat it up over medium high heat. (Closer to high, than to medium). Place your hand over the top of the pan to test it for heat. You want a nice hot pan.

5. When the pan is hot add 2 tsp butter and allow it to melt. Pick the pan up and tilt it to the side so the butter can spread out evenly over the skillet.

6. Pour the egg mixture into the pan. It should make a nice sizzling sound for you. Love that. 🙂

7. Allow the egg mixture to coat the bottom of the pan and cook for about 1 minute.

8. Take a spatula and slide the edge of the egg mixture into the center of the pan. Tilt the pan to the side and let the uncooked egg run from the center of the pan to the outside.

Repeat step 8 twice more, on the opposite sides of the pan.

Let the omelet cook for about 30 seconds more, until almost all of the of the egg is cooked through. You can still see there is a bit of runny egg on the top here. That’s ok.

9. Take your spatula, slide it under the omelet…

and flip it over, allowing the runny parts of the egg to cook through.  See that nice golden brown sear in the middle of the cooked egg, that’s what you want to see. Not a dark brown, but a pretty golden brown. That will give your omelet a lot of great flavor.

10. Add some chopped ham and grated cheese to half of the omelet…

and fold it over. Let it cook for about 30 seconds…

and flip it over to the other side. Cook for 15-20 seconds more.
