Chewy Chocolate Chip Oatmeal Bars and 17 Chocolate Chip Recipes for National Chocolate Chip Day

Oatmeal Chocolate Chip Cookies are a favorite of mine. The combination of the hearty oats mixed with sweet milk chocolate leaves me a bit weak in the knees, I have to admit.  I have been using my moms classic recipe for years (see it here). I love it to the moon and back, not just because the cookies are soft, moist and delightful but because my mom made them a lot when I was a kid…and what can I say other than she is super amazing and wonderful and they remind me of her. There you have it.

I have been on a search lately for a bar version of this recipe, because who doesn’t love the ease of making a whole pan of cookies without all the individual scooping and baking and tending, yes? This particular recipe I brought along to share with you today, is crazy good guys. CCRRRRRazy, truly. The bars are super moist, buttery, loaded with oats, chocolate and sweet wonderment.

They would be fabulous to pack in lunches, to take to a picnic, to make for a sunday night treat, as a gift for your neighbor or school teacher…or any other event you can possibly dream of.

They are dreamy, after all.

Let me show you how to make it happen…

1. Preheat your oven to 350 degrees.
2. Into your stand mixer or large mixing bowl place 2 C flour, 1 tsp baking soda, 1 tsp baking powder, 1 tsp salt and 1/2 tsp cinnamon. Toss them together with a fork to combine.

3. Grab 2 1/2 cups Old Fashioned Oats and add them to the mixing bowl.

4. Add 1 1/2 C brown sugar and toss everything together to mix.

5. Melt 1 1/4 C butter and pour it into the bowl. Mix for one minute.
6. Add 2 eggs and 1 Tb vanilla.

7. Mix until the dough has combined. It will be crumbly.

8. Add 2 1/2 C chocolate chips. I used milk chocolate, but semi sweet, butterscotch or cinnamon chips would also be fabulous.

Mix the chips in.

9. Spray a 9×13 pan with cooking spray and press the dough into it.

10. Bake for 20 minutes. Stick a butter knife or toothpick into the center. When it comes out clean the bars are done. Don’t worry if they look a little bit underdone. They should. 🙂 This will help them stay nice and moist.

10. Allow them to cool completely and then cut into bars, or eat them warm from the pan. Whatever suits your fancy.

Yield: 16 bars

Ingredients

2 C flour

I used old fashioned oats and my dough was sticky so it’s not the oats that is the difference….

I just made these, and ate so much with a few glasses of milk, they are soo delicious!! So what if the batter is sticky, the baked result is what matters. The whole batch just might be gone today! Yummy!!

I made these dessert bars according to the recipe for a catering, and they came out very aesthetically pleasing and so delicious. They were easy to cut and get out of the pan and also they were easy to arrange on a dessert tray for catering, which is always a plus. I read the reviews before I tried the recipe. I will definitely use this recipe again!

This is a keeper! Like everyone else, I thought, there can’t possibly be that much butter, can there? But there can! They turned out yummy! The oats were kind of hard when they first came out of the oven, but they softened up overnight (everyone softens up after two and a half sticks of butter).

Yes! Usually When baking you always use unsalted butter, unless otherwise specified. The salt reacts with the baking soda, so you don’t want to use too much salt by using salted butter. Best of luck!

I bake for more than 20 minutes the center is always raw. I have a brand new oven, it’s been checked for temperature, I end up having to bake these more than 30 minutes..

Great recipe, though, just needs baking tweaks! THANK YOU FOR SHARING!

Do you have a conventional bake option? It will bake evenly and I do find that at times you can go a little less or have to go a little more in time

I tried these and they turned out scrumptious. I used semi-sweet chocolate chips with a handful of butterscotch chips. I had to bake them 5 to 7 minutes longer. When they were still a bit warm, I put holes in it and then uses caramel sauce drizzles over the top to soak into the holes. My husband raved all night about how delicious they are.

These sound great but I want to make regualar cookies instead of bar cookies. Do I need to adjust the recipe at all?

I have made these oatmeal bars to many times to count and they are always a hit and turn out delicious every. Single. Time. I substitute coconut sugar and add unsweetened coconut. I always use dark choc chips as well. The dough has always been more gooey for me, but come out awesome every time. They are so good right out of the oven, but I actually prefer them a day later once they have settled.

Just made the recipe tonight. My dough was sticky and definitely thought initially too much butter (2 1/2 sticks equals 1 1/4 cups). I added some coconut flakes to one half and baked it for 25 minuets using my conventional bake feature. Texture was right on point and the cocunut added a great touch!

Brining it to work for weekly snack day tomorrow:)

I too have questioned the Butter amount also, and do you let it cool before mixing it in. The batter really isn’t crumbly it’s more thick and solid i’d say than crumbly. Thought maybe you used one and a forth sticks of butter instead of 1 and a forth cups to make it more crumbly?

Not going to lie…My family LOVES these chocolate chip cookie bars!! I have made them 4 weeks in a row! They are moist and delicious (even as the week goes on). We eat them by them selves and with some vanilla ice cream. Yum! Thanks for the recipe!

I have made these several times and they’re always a hit. I use half butter and half coconut oil.
This time i did that, but used 1C allpurpose flour and 1C almond flour. I had to use a slightly smaller pan, so they’re thicker than normal… which means they’re taking longer to bake through. They’ve been in the oven for a total of 35 minutes so far. The top is golden brown and crunchy, but the middle is still very much under done. It must be the pan size. Either way, they’re gonna be good.
But can I please tell you how DELICIOUS this dough is?

I made these the other night. Unfortunately I overbaked them. At 20 minutes they looked raw and at 26 minutes, they were overdone. The flavour was good though so I will definitely try them again.

my dough was sticky…in the oven now…it is possible the melted butter was too hot and melted the brown sugar…

I have made these bars several times, SIX times. I think. And the base recipe is fairly good but there few things that were driving me nuts about them. The dough is pretty wet. By the time the center gets done baking (clean toithpick) the outside gets way done and you have about 1-2 inches of the outer rim that is crunchy cookie like and is completely different consistency from the much softer and gooier center. Some of that was helped by lining the pan with parchment. But still needs tweaking.

I ended up reducing the butter to 1 cup instead of 1-1/2. Also changed 1/2 cup of the brown sugar to white. The dough was much less soupy and baked in about 25 minutes. They were chewier and because the cooking time was shorter the outside was not overdone like I kept getting in the original.

For kicks I like to drizzle a tad of melted caramel on top.

My ovens are brand new and I recently had them calibrated to make sure they were good to go.

Disappointed…mine are not chewy..crumbly & bit dry. I think too much oats? And Only baked 20 mins. Oh well.

Tried this recipe yesterday. Wet sticky dough not crumbly like so so many stated above. Used the correct oats. Followed the correct order of adding ingredients. I had to cook the bars an additional 8 minutes. They turned out delicious thankfully! Not sure if the ingredient amount for the flour and oats needs to be altered to get the crumbly effect?

My Hubby’s favourite cookie is an oatmeal chocolate chip from a restaurant in a state we don’t live in anymore. So for Valentine’s Day thought I’d try a batch for him and bring some in to the office. Dough was not crumbly or dry. So quick and easy!!! The house smells amazing and taste test…thumbs up!! Happy Hubby!! Thanks for sharing!!!

These are super delicious! I made them gluten free, with 1 1/2 cups oat flour and 1/2 cup sorghum flour, plus 2 teaspoons xantham gum. The texture is wonderful. They are chewy, moist and perfectly delicious. I baked them for 20 minutes and they turned out darker than pictured, but I’m sure that’s because of the different flours.

These are the best oatmeal chocolate chip bars ever!! They are so easy to make and so thick, chewy and delicious!! I added another 1/2 cup of oats to make it 3 cups, but that’s because we love that oaty flavor. Baked for 30 minutes and it was perfect. Can’t wait to make these again and again. Made these last night and they were amazing and just what I was craving. Mine dough was crumby and I used butter flavored crisco instead of butter. They fell apart last night as I ate one warm but today they are perfect texture and still amazing. I have to be careful with these as I’m diabetic.

These were delicious! Only next time I make them I would cut some of the butter because I felt like they were a little greasy. Could probably go with just one cup or even 3/4 of a cup.

Hi there. I tried baking these today but I ended up needing to bake them a lot longer than 20 minutes. At 20 minutes they were very gooey still. I used a 9 x 13 glass pan and I have a thermometer in my oven. Seems like I had to bake them for 40-45 mins. Just curious if you used a convection oven…

Yes, I do have a convection oven which may have been the discrepancy in the time difference. Did they still turn out well?
