Grilled Teriyaki Chicken Salad with Sweet Teriyaki Vinaigrette

Yesterday I posted a fabulous recipe for Grilled Teriyaki Chicken. It is wonderful beyond belief, I hope some of you get a chance to try it. I decided to make a main course salad out of the chicken (because I am in love with main course salads, you know) that includes a knock your socks off Sweet Teriyaki Vinaigrette that is seriously the bomb dot comb. This salad is scrumptious, addicting and wonderful! Sticky white rice is covered with crisp greens, mandarin oranges, green onions and crunchy Chinese noodles. Sliced chicken goes over the top and the whole thing is drizzled in dressing.

Yum! Seriously. It has bumped itself all the way to the tippy top of my Favorite Main Course Salad list.

Grilled Teriyaki Chicken Salad with Sweet Teriyaki Vinaigrette

Let me show you how to make it happen!

1. Marinate and cook some fabulous Grilled Teriyaki Chicken (recipe here).
2. Cook 2 C rice according to package directions.

2. To make the vinaigrette pour the following ingredients into a blender.  1/2 C prepared teriyaki sauce (recipe here), 1/2 C chopped green onion, 6 Tb rice wine vinegar, 1 tsp lemon juice, 1/2 tsp ginger, 1/2 tsp onion salt, 3 Tb sugar, 1/8 tsp cayenne pepper, 1/8 tsp salt, 1/8 tsp pepper and 6 Tb olive oil. Blend until well combined. Add 1 tsp toasted sesame seeds, stir to combine.

3. Into a large bowl place 1 head romaine lettuce (chopped), 1 (15 ounce) can mandarin oranges, 1 C shredded carrots, 1/2 C chopped green onions and 1 C Chinese noodles. Toss to combine.

4. On individual serving plates layer rice, salad, sliced chicken and drizzle with dressing.

Serve and enjoy!

Ingredients

2 C rice
1 head romaine lettuce
1 (15 ounce) can mandarin oranges, drained
1 C shredded carrots
1/2 C chopped green onions

Do you serve this with the rice and chicken hot or cold? I am making this for my book group and serving in an hour……hopefully it is good either way.
