**UPDATED JULY 2023** I can’t even begin to count the number of times I’ve made this amazing salad. It’s a perfect take-along salad for a bridal shower, backyard bbq, church pot luck or any other event you might need to take a salad to. I never take it anywhere that I’m not asked for the recipe. I may or may not have seen one of my friends drinking the dressing straight. 😉 It’s a keeper, everyone!  

Boy, do I have one tasty salad recipe for you all today. I have to admit to making it three times last week. Seriously. I look a big bowl of it to a family party and then we ate it as a side dish for dinner a couple of times as well. I can’t get enough of the beautiful fresh berries that are popping up at the grocery store and this salad is a wonderful way to use them up! This is what you need to know about it…

Juicy fresh strawberries and blueberries are tossed with beautiful dark leafy greens, feta cheese, red onion and sugared almonds. The creamy dressing is made with dark blueberry jam, Dijon mustard and mayonnaise (and a few other tasty ingredients). I even opted to use Best Foods Light and it came out fantastically well. So, going light is definitely an option here.

Berry Almond Salad with Creamy Berry Dressing Jamie Cooks It Up!

Ingredients

  • SUGARED ALMONDS:
  • 1 C sliced almonds
  • 2 Tb sugar
  • dash salt
  • DRESSING:
  • 6 Tb blueberry jam
  • 1/2 C mayonnaise (I used Best Food Light)
  • 1 Tb Dijon mustard
  • 6 Tb red wine vinegar
  • 1/2 C +2 Tb sugar
  • 3 Tb red onion, chopped
  • 1/4 tsp salt
  • SALAD:
  • 12-15 cups Spring Mix Lettuce
  • 3 C strawberries, sliced
  • 2 C fresh blueberries
  • 1/2 red onion, sliced
  • 1/2 C feta cheese

Instructions

  1. To make the sugared almonds, grab a medium sized skillet and pour the almonds, sugar and salt into it. Heat over medium high heat and watch it carefully. When the sugar starts to dissolve, gently stir the mixture while it continues to heat until the nuts are golden brown and coated with the caramelized sugar. It should only take a few minutes, but will burn if not watched after. Immediately pour the sugared nuts onto a plate to cool.
  2. To make the dressing, combine all ingredients in a blender and blend until smooth.
  3. Grab a large platter and layer the spring mix over the bottom. Add the other ingredients (besides the sugared almonds)  in rows over the top of the lettuce. Add the nuts just before serving.
  4. Serve with the dressing on the side.
