Boy am I excited about the recipe I have to share with you all today! This pasta salad is full of fabulous fresh veggies, chunks of cheddar cheese, grilled chicken, fresh cilantro and corkscrew pasta. The dressing is made from a Hidden Valley Fiesta Ranch Mix that packs a ton of fabulous creamy southwest flavor. I made this salad a couple of weeks ago for a family party and it was a hit. It’s great as a take along side dish but would make a nice main course salad as well.

Fiesta Ranch Pasta Salad from Jamie Cooks It Up!

Fiesta Ranch Pasta Salad

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 12 servings

Ingredients

1 (16 ounce) package rotini (corkscrew) pasta
1 green pepper, chopped
1 red pepper, chopped
1 C sharp cheddar cheese, cubed
2 C grilled chicken, chopped
2 C grape tomatoes, sliced in half
1/4 C cilantro, chopped
1/3 C red onion, chopped
DRESSING:
1 (1.1 ounce) package Fiesta Ranch Dip Mix
1 C mayonnaise (full fat)
1/2 C milk (1% is fine)
1/2 C sour cream

Instructions

1. Cook the pasta according to package directions. Pour it into a strainer and run cold water through it until the tempreature is reduced and the pasta is cool.
2. Chop all of the veggies, chicken and cheese and add them and the pasta to a large bowl.
3. Mix the dressing ingredients together in a small bowl. Pour just half of the dressing over the salad and stir to combine. Chill for 1 hour.
4. Pour the rest of the dressing over the salad just before serving.

  2. This is so good! We’ve made it a couple of times this summer, omitting the cilantro & onion, and using buffalo chicken. I just used the regular ranch seasoning mix in mine as well. Thanks so much for a meal that has helped me get through all of the awful hotness we’ve had this year! ?
