Large Batch Frosted Brownies

Summertime is in full swing, my friends which means you (and I) are most likely up to our eyeballs in fun. Fun with family, fun with friends, fun at camps, youth conferences, family vacations, fun having kids home for the summer, fun running around doing all kinds of fun, summer like things. I am often finding myself (amidst all of this crazy fun) in need of recipes that feed a crowd. You may have noticed that earlier this summer I posted a great recipe for Large Batch Chocolate Chip Cookie Bars. I have seriously made them half a dozen times this summer. I know many of you have made them as well, and that makes me happy. I decided the lot of us might be able to use Large Batch Frosted Brownie recipe as well. I made them a couple of weeks ago for a large family gathering at Bear Lake and they were a screaming hit.

The brownies are thick, chewy and have a fabulous fudgy texture. The frosting is silky and delightful. The batch will make 35 large brownies or 70 small one. This recipe also freezes well, which is an added bonus.

Large Batch Frosted Brownies from Jamie Cooks It Up

Large Batch Frosted Brownies

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 35 large bars or 70 small bars

Ingredients

2 C butter, melted
4 C sugar
1 C cocoa powder
4 t vanilla
8 eggs
3 C flour
1 t salt
1 1/2 C chocolate chips (milk chocolate or semi sweet)
FROSTING:
1/2 C butter, melted
1/2 C cocoa powder
6 C powdered sugar
10 T milk
2 t vanilla
dash salt

Instructions

1. Preheat your oven to 350 degrees.
2. Into your stand mixer place the melted butter, sugar, cocoa powder and vanilla. Beat on low speed until combined and smooth. Should take about 1 minute.
3. Add the eggs, one at a time, mixing well between each one.
4. In a separate bowl combine the flour and salt. Add it to the batter and mix on medium speed until smooth. Should take about 2 minutes.
5. Add the chocolate chips and stir until combined.
6. Spray a large cookie sheet with cooking spray (mine is 11x17). Scoop 3/4 C of the batter out of the mixing bowl and pour the rest onto the cookie sheet. Spread it out evenly with a knife. The remaining 3/4 C batter can be baked in a loaf pan.(or you can simply discard it). Don't be tempted to add it all to the cookie sheet. It will overflow and you will have a mess on your hands. 🙂
7. Bake for 25-30 minutes, making sure not to over bake (the loaf pan will bake for less time). The brownies are done when a toothpick inserted into the center comes out clean. Allow them to cool completly.
8. To make the frosting place the melted butter and cocoa in a large mixing bowl. Beat on medium speed until well combined. Add the powdered sugar, milk vanilla and salt and mix until smooth and glossy. Spread evenly over the brownies.

Jamie, just made them!! Delivered to our local firemen (I take them treats!!) and my husband had a couple before I wrapped them up!! Yum — when I got to the fire station, they grabbed a couple right away and loved them!! Thank you so much for helping me with the recipe!!

Is your pan a 1 inch or 2 inch high. 11×17 pan? I have one that is 2 inches and if so I won’t have to discard the 3/4 cup. Thank you

I use your chocolate chip cookie bars for a homeless feeding that I do every week, I feed around a hundred people each Monday and the love the cookie bars, can’t wait to do brownies for them, thank you for sharing
