Friends, I am about to impart to you what might be the easiest meal to come out of my kitchen in quite some time. You can make this healthy, simple dinner in under 25 minutes. That’s something to smile about, right? The beef has a wonderful crumbly texture and is infused with a fantastic savory sauce, with a hint of sweetness and the tiniest bit of a spicy kick. Served over quinoa (or rice if you choose) and layered in a crispy lettuce leaf, it’s a fantastic meal…of that you can be sure.

Let me show you how to make this super easy, super wonderful meal happen…
1. Into a medium sized sauce pan place 2 C hot water, 1 C quinoa and 1 tsp chicken bullion. Bring it to a boil then give it a stir, cover and reduce the heat to medium. Allow it to cook through and then toss with a fork. Should only take about 10 minutes.
2. Heat a large deep skillet up over medium high heat. Add 2 pounds ground beef and 4 cloves of minced garlic. Sprinkle everything with salt and pepper. Chop the meat up with a spatula and cook until brown and crumbly. Should take about 10 minutes.

3. While the beef is cooking grab a glass measuring cup and mix together 1/2 C + 1 Tb soy sauce, 1/4 C beef broth, 1 Tb sesame oil, 1/2 tsp red pepper flakes, 1/4 tsp ground ginger and 1/3 C brown sugar.
Pour the mixture into the cooked ground beef, bring it to a simmer and allow it to cook for 5 minutes.
4. Remove the pan from the heat and sprinkle 1/3 C chopped green onions over the top.
Spoon the cooked quinoa and Asian beef into romaine lettuce leaves and serve immediately. Enjoy!
