We love main course salads around here. Rumbi’s Mango Chicken Salad as well as the fabulous Kneaders Turkey Cranberry Salad surface on my menu plan pretty regularly. A couple of my kids grumble about eating salad for dinner, but I try to politely remind them that we can’t eat Lasagna with Garlic Cheese Bread every day and that vegetables will make them immensely brilliant. I’m not sure if they believe me, but it has won them over on several occasions, at least.
This Smokehouse Almond Apple and Chicken Spinach Salad is my latest Salad for Dinner creation and features…
…these delightful Smokehouse Almonds. (This is in no way, shape or form a sponsored post. Just sharing a favorite, here) Have you ever tried them? They have such an amazing smokey/salty flavor. It pairs fabulously in this salad with sliced apples, mozzarella cheese, shredded chicken and red onions. I made a few adjustments to my Creamy Poppy Seed Dressing recipe to drizzle over the top of the salad and man, is it good. The combination of salty and sweet is wonderful. My salad loving children gobbled it up. Those who claim that they hate to eat salad deemed it “pretty darn good!”

Thanks for your question. If you use rotisserie chicken it should be plenty flavorful with out adding any extra seasonings.
