Hello there, dear reader and thank you for dropping by today! I have a super easy, totally fantastic soup recipe to share with you all today that only requires 4 ingredients. What could be better than that, I ask you. 😉 I’ve made this yummy soup a couple of times over the past month. Our life has gotten a little crazy, time has been short in the kitchen department and my family has fallen in love with this creamy soup. All good reasons to make it, right?
About a month ago we decided to sell our home in beautiful Herriman, have done so and moved about an hour north to Layton where we are knee deep in a kitchen/family room remodel. Talk about a lot of change in a quick hurry!
We’ve ripped out walls, carpet, a wood floor and the kitchen island.
Lucky for us we’ve got a lot of great helpers.
Crossing my fingers we can get things put back together in the next few weeks. We are hoping to start installing a new wood floor soon! Anyhow, you can see why we have needed this yummy Crock Pot Potato Cheese Soup! Easy and fast is what we are all about lately. I thought some of you might appreciate that kind of thing as well. It is December, after all. 😉

Also, I wanted to show you the type of potatoes that go in this soup. You can find these Potatoes O’Brien (with onions and peppers) in the freezer section of your grocery store. Best of luck!

Thanks for your question! I added to the post a picture of the frozen potatoes you’ll need. If those aren’t available in your area, look for frozen potatoes (diced works best) and then add some sauteed peppers and onions.
