Stuffing Chicken (Crock Pot)

by Jamie
This recipe has been living and breathing on my blog for nearly a decade. It’s been a family favorite for longer than that, and seems to make it’s way to our table at least once a month. It’s super easy, you literally just put everything in the crock pot, close the lid and let it cook away. The chicken turns out nice and tender in a creamy, cheesy sauce that’s all covered with a crispy stuffing mixture.
Truly, this is one of those standard family recipes that hits to spot every time.
If you haven’t tried it yet, I hope you will!

Ingredients

  • 4-5 chicken breasts (you can use frozen)
  • 8 slices swiss cheese
  • 1 C cream of mushroom soup
  • 1 C milk
  • 1 (6 oz) package stuffing mix
  • 1/4 C melted butter

Instructions

  1. Generously spray a large crock pot with cooking spray.
  2. Place the chicken in the bottom of the pot and lay the slices of cheese over the top.
  3. Combine the cream of mushroom soup with the milk and pour it over the top of the cheese.
  4. Sprinkle the entire box of stuffing mix over the top of the chicken and cheese.
  5. Drizzle the melted butter over the top.
  6. Cover and cook for 4 hours on high.
  7. Serve and enjoy!

Notes

This fabulously easy chicken recipe has been a family favorite for years. Tender chicken is slow cooked in a cream, cheesy sauce, covered in a bed a crispy stuffing mix. Hope you love it as much as we do!

We had this for dinner tonight and absolutely loved it!! With my busy schedule, I love dinners with less than 10 ingredients and less than 10 minutes prep time. THIS WAS PERFECT!!!! I posted a link: http://ificould-ificould.blogspot.com/2010/11/chicken-stuffing-casserole.html

Thanks!

Jamie,
This is probably a silly question, but do I just dump the stuffing and seasonings on top of the liquid dry? If so, does the stuffing cook okay with only the spray on top?
Thank you

Yes, ladies. Just dump the stuffing and seasonings on top of the casserole. It will cook just fine. Good luck! Hope you enjoy it.

Jamie what can I say but…wow…made this last night and my family loved it! They said I will have to make this again. I didn’t have the Swiss cheese so I used mozzarella (next time will get the Swiss to try). Turned out great! The chicken was moist and tender and the stuffing was a perfect. This was so easy to make after a long day at work. Thank you…all of your recipes are wonderful. I love knowing that I don’t have to worry when I pick a recipe from you to fix. I just know it will be good and that’s a wonderful feeling. Saves my time and my pocket book! Thank you again.

Hi jamie. I plan of making this and was getting my grocery list together. In the picture it looks like there are mushrooms, but they are not listed with ingredients. Do you sauté them or add them raw? Thanks!

Bryn,
I do (sometimes) add mushrooms to this recipe. Just layer them over the chicken, and before you add the cheese. I usually use canned. Good luck!
