This is a super weekend breakfast recipe. I found it in a great Taste of Home cookbook. It tastes quite a lot like warm oatmeal cookies. You heard me….warm oatmeal cookies for breakfast. My kids were thrilled! You simply mix up the batter, spread it evenly on a sprayed cookie sheet and bake for about 25 minutes. We had ours with warm berries, milk and brown sugar. It’s a great use of your food storage staples.
Ingredients
- 1 ½ C quick cooking oats (I used regular)
- ½ C sugar
- ½ C milk
- ¼ C butter
- 1 egg
- 1 t baking powder
- ¾ t salt
- 1 1/2 t vanilla
- Milk
- Frozen mixed berries, warmed in the microwave (I buy them in a big bag at Costco)
- Brown sugar
Instructions
1. Combine the first 8 ingredients together and mix well.
2. Spray a large cookie sheet with cooking spray and spread the batter out evenly.
3. Bake at 350 for 25-30 minutes, or until golden brown.
4. Serve with milk, warm berries and brown sugar.
