Today I have for you one of my family’s all time favorite meals. This is one of those rare recipes that gets a 7 out of 7 thumbs up approval. Those kind of recipes are a blessing, are they not! There are a lot of great things about this baby. It’s a nice “Sunday” type meal, that can be made in about 1 hour. You don’t have to get all prepared before church with the crock pot or anything like that. Though those magical crock pot recipes are fabulous as well! How could I ever chug a crock pot. I adore my crock! Couldn’t live with out that blessed contraption.  
My gang and I have been assigned 9:00 AM church this year, so the last thing we are worried about on a Sunday morning is putting something in my pal the crock pot. We are far too busy running around the house trying to find socks for 7 people. Just for the record I own 3 pair of black nylons. It is the strangest thing but I think all 3 pair must have just gotten up out of my drawers and walked right down the street, never to be seen again. I guess that’s what happens when you ask your daughters to fold the laundry. Things just start to walk right out the door. If you see them wandering the streets please catch them and return them to me. I have worn MyHandsomeHusband’s black socks underneath my black boots for 2 weeks in a row now. (Just between you and me.)
I’m not sure which one of you fine people got me talking about my nylons but let’s get onto the recipe, for goodness sake.
 This meal is great to make in the afternoon after you and your black nylons have returned from church, or on any other day for that matter! It’s also MUCH healthier than actually frying a chicken, which is another bonus.

Pan Fried Chicken and Country Gravy
Yield: 6-7 Servings
Prep/Cooking Time: about 1 hour
Recipe from Jamie Cooks It Up!
5 chicken breasts
3/4 C flour + a dash of salt
1 C Italian bread crumbs
1/2 C milk
Olive Oil
1 C chicken broth (or 1 bullion cube dissolved in 1 C water)
3 packets Country Gravy Mix
2 C milk
1 C water
drippings from pan
1. Place the chicken breasts in a gallon sized freezer zip lock bag. Pound the chicken out flat with a meat mallet, or bottom of a glass.
2. Cut each breast in half.
3. Dredge each piece of chicken in the flour and place on a pan you can fit into your freezer.
4. Place your pan full of chicken in the freezer for about 10 minutes. This helps the flour to stick to the chick, baby.
5. Put the milk into a pie plate or similarly sized dish. Put the bread crumbs into another dish.
6. Begin to heat up a large skillet. Add about 2 T olive oil.
7. Dredge each chicken piece in the milk and then immediately into the bread crumbs. Place into the hot pan.
8. Cook over medium heat for about 7 minutes, or until the bottom starts to get golden brown.
9. Turn each piece over and brown on the other side (about 7 more minutes)
10. Add the broth to the pan and cover. Cook for about 5 minutes, or until the chicken is no longer pink in the middle.
11. Carefully pour the juices from the pan into a medium sized sauce pan. Take the chicken off of the burner, leave the lid on to keep the chicken warm while you make the gravy.
12. Add the gravy packets, 2 C milk and 1 C water to the chicken juices in your medium sized sauce pan. Stir well to incorporate. Bring to a boil while stirring. Once the gravy is ready you are ready my friend. Ready to enjoy a wonderful meal!
Serve with mashed potatoes.

I made this for Sunday dinner after church, followed the directions exactly, and it was sooooooooo yummy! Served it with roasted garlic mashed red potatoes and corn. When I asked my hubby if I could make this again he said “you betcha!” He loved it, too! Amazing recipe! The instructions were so easy to follow and it turned out so awesome!   3. Just made this tonight! Huge hit with my husband who said it had “that down home fried chicken flavor”. My 3 yr old ate it up! It just made way too much gravy. Also I had a problem with my crust falling off. Thanks for another great hit recipe!!!!

  4. I made this tonight and loved it! The heat on my burner was up a little high and the bread crumbs on one side of the chicken did get a little dark, but it was still delicious. I used three chicken breasts and one packet of gravy. The 2/3 cup milk and 1/3 cup water with the pan drippings was perfect for a nice, thick country gravy.     I do have a question however, what is country gravy? I have just moved to the States from Canada and am finding groceries are so different here. Thank you for sharing, and for being you. God bless!
