Healthy Chicken Salad Sandwiches

 I love chicken salad, but have always been bummed about the high fat content. I have played around with  many chicken salad recipes trying to make them more healthified. Just changing out regular mayo for the light stuff left me with a flavorless, dry, sandwich. That is not a good thing. So I have added fresh rosemary, some chopped almonds, raisins, and green onions along with  Best Foods Light. The result is definitely not as creamy as the regular fat version, but it is very flavorful and filling….with out all of the fat. Those are the kind of recipes this girl needs hangin’ around. The kind that taste great and doesn’t bump me up a pant size. 
I’ve got some more great healthy food ideas for you coming up after this recipe. Also, watch this week for a fabulous recipe for Cracked Wheat Feather Rolls. They were great with this sandwich. 
Healthy Chicken Salad Sandwich
Yield: 8 sandwiches
Prep Time: 15 minutes
Cooking Time: 20 minutes
Let it chill in the fridge: 1 hour
4 chicken breasts (you could use canned chicken)
1/2 C almonds chopped
1/4 C green onions chopped
1 t fresh rosemary chopped
1 C raisins or craisins
1 1/2 C Best Foods Light
1/2 t lemon juice
1/4 t salt
1/8 t cracked pepper
1/4 t sugar
1. Place your chicken breasts in a large stock pot. Cover with water and bring it to a boil.
2. Turn the temp down to medium heat and let the chicken cook. It should only take about 15 minutes for it to cook through.
3. Remove the chicken from the water. Shred it up with a fork, or your fingers.
4. Let the chicken cool for about 15 minutes. You could put it in the fridge to speed up the process. You don’t want to mix the mayo with it when it’s hot.
5. Mix the shredded chicken and all of the other ingredients together in a large bowl.
6. Cover and refrigerate for at least 1 hour. Enjoy!
Rold Gold Honey Wheat Pretzels
These babies are fabulous for many reasons.
They have much less fat than potato chips.
 They are great to give to little kiddos who are just starting with solid foods, since they don’t get all gummy and messy like a graham cracker would, and they are easy for them to hold onto.
 They aren’t crumbly….so there is nothing for me to sweep up off the floor after my kids have eaten them.
They taste great!
Bosc Pears
This is not your ordinary pear folks. It is not a Bartlett, nor a D’anjou. It is a BOSC.
The first time I came home with these MyHandsomeHusband said,
“What in the world is that! That looks like something SCHMIEGEL would eat.”
 Yes, all you Lord of the Ring fans. Schmiegel.  The disgusting, creepy, foul looking creature that runs around with “my precious” drooling out of his mouth.
It turns out that these pears are wonderfully sweet, and my family is addicted to them. Unfortunately the name “Schmiegel Pear” has stuck. The poor bosc pear has been labeled as such around these parts. 
When my daughter Anna was in Kindergarten she took one of these lovely pears to her teacher one morning.
“My goodness, Anna! I don’t think I have ever seen a pear like this. What kind is it?” he asked her.
You know what’s coming, don’t you.
You are picturing the slimy, drooling, Schmiegel himself, aren’t you?
“It’s called a Schmiegel Pear, Mr. Kay.” she said and skipped off to her desk.
Hope you try the Bosc (Schmiegel) Pear….and I hope you can do it without drooling on yourself.

What??? Your Anna had Mr. Kay??? The one and only amazing Mr. Kay that teaches Kindergarten??? Must be my little nephew in law Ryan!! Isn't he so cute!

Jamie,
Rosemary isn't something I have used in the past and I am not familiar with it…but I bought some (fresh) today because I am making your awesome carrots tomorrow for Sunday dinner. When you say chopped, how do I do that? Do I pull the little leaf things off the stem and then chop or do I chop the whole thing together? Sorry to be so naive…I am working on being a better cook. Thanks so much! I love your website!

Jamie,
When using fresh rosemary I always take a pair of cooking scissors and snip the little needles off the center branch. I usually cut each of the needles in two. You don't want to eat the stiff center branch, only the little needles. You can also remove the needles with your fingers and then chop them on a cutting board with a knife.

How amazing is it that you know Mr.Kay! Oh how we miss that man at our school! He was hands down the best Kindergarten teacher we have come across. Tell him hello for us. (If he would like to return to Foothills Elementary I know two twin boys that will be needing a great K teacher in another year)
I think Anna had a little crush on him. She was always bringing him treasures to school.
