Pasta Salad with Artichokes and Feta

This salad is very unique and tasty. The feta cheese and artichoke hearts give  nice sharp bite to the pasta. It is a great addition to any get together. The recipe comes from my sweet friend Katherine. She does not have a sharp bite, or harsh word to say about anyone. She’s a sweet gal raising some beautiful kids. And I mean beautiful! 
Pasta Salad with Artichokes and Feta
Yield: 20 small servings
Time: 30 minutes
1 box bow tie noodles
1 large can olives
1 1/2 C marinated artichoke hearts, chopped
1 container Athenos Crumbled Feta Cheese
1 C Mozzarella Cheese, shredded
Dressing:
1 t dried basil
1/2 t dried thyme
1/4 C parmesan cheese
3/4 C olive oil
1/4 C red wine vinegar
1/4 C balsamic vinegar
1/2 t salt
1/2 t pepper
dash season salt
dash garlic salt
1 T sugar
1. Cook the pasta according to directions. Run cold water over the top of the pasta and set aside.
2. Put all dressing ingredients into a blender or small food processor and blend the ingredients all up nicely.
3. In a large bowl add the pasta, artichoke hearts, olives, and feta. Pour the dressing over the top and toss with the mozzarella.
This salad is best if mixed just before you serve it.

Hi Jaimee,
I am so glad you added this recipe to your blog. I loved it at the shower. I have what may be a stupid question for you. I have never used artichokes before in a recipe. So when you say “marinated artichokes hearts” what exactly is the “marinated part” refer to? I assumed you were using fresh artichokes but the marinated thing made me wonder if there is a canned version you use instead. If it is a fresh artichoke–about how many artichokes does it take to get 1 1/2 c.?

Hiedi,
You do buy marinated artichoke hearts in a jar. Costco sales a big jar for about $7. They taste great! but you can also purchase them in a smaller jar at any grocery store. When I made it I just used one little 7.5 oz jar. It still tasted good, but I would suggest using two small jars instead of one. Hope this helps! Have a Happy Easter Heidi!
