Molten Lava Cake

by Jamie
Wow! That picture’s bright enough to knock your socks off, isn’t it!
It just shouts out….
Eat me!
Eat me!
Rah Rah!
Eat me!
No, I wasn’t a cheer leader in high school.
Those of you who know me from high school are nodding your head and thinking…
“Nope, no way (chuckle, chortle) that girl is not coordinated. Isn’t she the one with the husky male singing voice and really big feet?”
Those two qualities alone do not a cheer leader make.
But if I could cheer for this fabulous Molten Lava Cake, I would!
It is seriously like a party in your mouth my friends.
A fun old party.
This recipe makes 8 ramekins full of heavenly chocolate bliss.
(You could easily 1/2 the recipe if you only want 4 ramekins full of chocolate bliss.)
When your fork hits the center of the cake it just oozes out all over your plate….
I told you it was going to be a party in your mouth.
Molten Lava Cake
Yield: 8 Servings
Time: 40 minutes

 Recipe adapted from: Kraft Foods

8 squares Baker’s Semi Sweet Chocolate
1 C butter (2 sticks)
2 C + 2 T powdered sugar
4 eggs
4 egg yolks
1 t vanilla
dash salt
12 T flour

1. In a medium sized microwaveable dish melt your chocolate and butter. Heat it up in 1 minute intervals, taking it out and stirring between each interval.
2. When it’s nice and melted stir it all around to incorporate the butter into the chocolate.
3. Add the powdered sugar and stir to incorporate.
4. Add the eggs and egg yolks and blend them in with a wire whisk. Add the vanilla and salt and stir.
5. Stir in the flour.

6. Generously butter the insides of the Ramekins.
7. Pour the batter into the cups.
8. Bake at 425 degrees for 13 to 14 minutes. You want the out sides to be firm, but the center to be soft. Take them out of the oven and let the cute little darlings just sit there for a minute or two.
9. Run a knife around the edge of the dish and turn it upside down on your serving plate. Serve warm with vanilla ice cream.
Enjoy the party!

I would use them to make eggs, these lava cakes, pudding tarts and anything else. I don't have any pretty little dishes like these. They look like fun!!! It would be a treat to learn how to use them!

Jaimie,
I have been following your recipes for a while and each time I come across one that is absolutely devine I have to try it out. I looked on the cookware.com site to see the different types and all I can say is I am willing to try this out even though it scares me to death to try something new. I made my boyfriend your Pecan Pie and he loved it so much that's all I make for him on speacial occasions. He is culinary artist himself and I'm always looking for ways to his heart… through his stomache hehe.

I have been experimenting with ramekins as of late, but I don't have enough for the whole family. Can't wait to try this recipe! Lovin' the yummy blog.

P.S. Are you interested in new things to try?
P.P.S. Okay, cheer wasn't really your thing, but you had a million other talents for us to envy. Not to brown-nose, totally true.

Well I would have to try these lava cakes for sure! Whenever I go out to eat and actually have room for dessert, I get a lava cake. I'm also a big fan of souffles, so those would be on the list as well.

I use my ramekins for EVERYTHING, and recently just broke three of them!!! My kids love getting their own serving bowl. I would love a cute new set like these!

The first thing I would make in them would be those molten lava cakes! Individual egg casseroles, homemade pudding, to store small amounts of leftovers for the next days lunch… I'd put mine to good use. Great giveaway!

What adorable ramekins! I think I would probably use them as you did to make molten chocolate cakes, because I haven't made them in SO long, or I'd try some chocolate souffle's!

These look like very versatile dishes. You could of course bake in them and make the molten lava cake but could also be used for things on the table like sour cream or salad items to be added if you choose like bacon or for snack items like nuts and mints.

I would for sure try your recipe for Molten Lava Cakes – they look fabulous, and they use ingredients that I always have on hand – dinner guests would be in heaven!!! I would also use them for Peach Crumble, Trifles, and of course Vanilla Ice Cream with your Chocolate Sauce (If anyone hasn't tried this recipe yet, it is a WINNER.)

I have always wanted a set of these, but could never get up the courage to buy them. I would LOVE to use them to make this yummy molten lava cake and I can't imagine what other things I could come up with. (I love the internet and searching for things, so “uses for Ramekins” would be my next search!)

Um Jamie, I want a ramekin so I can make that molten lava cake. Duh. What else would I want one for? 🙂 I'm getting a bunch of ladies together to make the serving trays! We may have to make some of your yummy treats too while we're at it. Speaking of treats, I made your peanut butter chocolate chip cookies and ate most of them myself. BEST COOKIES EVER!!!! Well, next to your sugar cookie bars anyways. 🙂

I've wanted a ramekin set for ages!! I must say, my creativity has been stunted somewhat without them. I've wanted to make creme brulee, french onion soup, and my absolute FAVE, molten lava cake, but my lack of proper dishware has been limiting. I hope, hope, hope I get picked!-sarah lunt

I got turned on to your blog by one of my married daughters – and have really enjoyed it!!! I've gotten several good recipes and my family has loved them all – so nice to be inspired to cook dinner again. Thank you.

I would love to try these cute ramekins with your chocolate molten lava cake – and rice pudding – and individual pot pies – and anything else I can think of. Thanks again for your inspiration.

I would use them to make this wonderful lava cake! Probably as a big ice cream bowl and maybe even keep them displayed on my kitchen counter top! They are beautiful and would match my decor wonderfully!!

I'd make the molten lava cake, obviously! But the ramekins every day job would be to use for making perfect little circles of microwave-cooked scrambled egg that fit exactly right onto a toasted English muffin for quick and easy homemade “mc” muffins.

The first thing that came to mind for me was pot pies…..but the molten lava cakes look scrumptious! I've seen these before but never tried to make them. I think baked rice pudding would be good, too. Beautiful ramekins. I enjoy your blog, Jamie.

I have seen so many recipes that require ramekins, and I don't have any. So no matter how good the recipe looks, I pass it on by. But if I had some, I would be cooking up a storm! Starting with your lava cake. Oh my goodness gracious deliciousness looking!!

Oh, these look so good. Can't wait to try the recipe, but I'll have to use a muffin pan since I don't have any of these cute little ramekins – see I even learned a new word today. I think some quiche would be good in these too. I'm trying out the tier plate this weekend too. Thanks.

I have a recipe for Gourmet S'mores, and it would actually look gourmet if I had pretty ramekins. I would also like to try German pancakes in them so that each serving has tons of that fluffy crust around the edge!

Creme brulle for breakfast, creme brulle for lunch, creme brullee for dinner. That's what I would make in those beautiful ramekins. WAIT, is it in a package of four? Then creme brulle for at midnight. I lived in France and fell in love with the perfect delicious simplicity of creme brulle.
