So.
I have to admit something to you.
Right here and now.
I have always struggled a bit with Lasagna making.
It’s true.
It seems to always turn out too runny or too dry.
My family always gives it the
“Yeah. So. Um……it was just ok, Mom but thanks for making it.”
Until now my friends!
 I do believe I have finally fiddled and concocted enough.
This Luscious Italian Lasagna and I  have received the following family ratings…
“Wow.”
“It is BLOG WORTHY!”
“More.” some of us have a small vocabulary…
“Get out of here…that is good stuff.”
“Totally make this every night.”
Don’t you love it when that happens?!
Luscious Italian Lasagna
Yield: 10 servings
Time: 30 minutes prep + 45 minutes baking time
Recipe from Jamie Cooks It Up!
1  -16 oz box lasagna noodles
2  -32 oz jars spaghetti sauce (I used 2 quarts of the homemade sauce we canned last fall from our garden tomatoes….oh, the beauty of that sauce. Get some tomatoes planted in the ground….I’ll be posting the recipe come August.)
1   pound sausage
1  -15 oz ricotta cheese
2 C mozzarella cheese, grated
1 C Parmesan cheese, grated
1 egg, whisked up until frothy 
1/4 t salt
1/2 t oregano, dried
1 t parsley, dried
1/4 t cracked pepper
1/2 C mozzarella cheese, grated
1. In a large skillet brown your sausage. Drain off the fat and add your spaghetti sauce. Let the fine looking mixture simmer for about 20 minutes.
2. Cook up your lasagna noodles. Pour into a colander and run cool water over the top of them.
3. In a small mixing bowl combine the cheeses (all but 1/2 C of mozzarella), spices and the beaten egg. Mix well with a wooden spoon making sure everything is incorporated well.
4. Now for the layering! Spoon about 1/2 C of your sauce mixture onto the bottom of a 9×13 baking dish. Layer half of the noodles on top of the sauce, sprinkle with half of your cheese mixture and cover with half of the sauce. Repeat these layer one more time…

5. Sprinkle the top with 1/2 C mozzarella cheese and smile a big pretty smile. 
6. Cover with foil and bake at 350  for 45 minutes. Or at this point you can cover, and put it in the fridge until you are ready to eat. You should plan to cook it for 1 hour if it has been refrigerated.
7. Let the Luscious Mixture from Heaven stand for about 10 minutes before serving. This will allow all the saucy juices to settle. Enjoy!

  1. Is there any way to make this a freezer meal? And if you refrigerate it before cooking how long will it be good in the fridge?

    1. Leanne,
      This would make a great freezer meal. After it’s assembled (and before you bake it) wrap it tightly with tin foil and pop it into the freezer. On the day you are ready to use it, allow it to thaw completely and then bake as directed. If you want to put it in the fridge between assembly and baking I would imagine it would be good for up to a day or so. Good luck! Hope you enjoy it.

    2. Got that right. Thankfully, I couldn’t eat the enirte piece of chocolate cake too sweet. So, I stole another piece of my daughter’s candy (the less-sweet mini Snickers bar). I need to set up some kind of training during the winter months to ward off the temptation of holiday cakes/pies.

    I made this recipe tonight for my fiance. Our wedding is coming up on 9/14/13 and we recently purchased our first home. We were previously both living at home with our parents. Well, for the past month I have had one sauce pan, one fry pan, and the bare minimum (like no utensils) to make a VERY basic meal. Well my bridal shower was yesterday and I now have a fully stocked kitchen so I decided today would be the very first time I would make him a “real” meal. I’m worried I may have set the bar too hight!!! This was DELICIOUS, and he just ate it up and kept raving on how good it was. He even packed up leftovers for lunch for himself and his co-worker tomorrow!!!! Thank you for making me seem like a master cook 😉
