I know it looks a little bit like I put all of that wonderful roasted garlic into some vanilla ice cream…but do not let your eyes deceive you.
Here you have a flavorful scoop of
Mashed Potatoes with Roasted Garlic. Simple and wonderful!
These beauties go fabulously with many kinds of meals.
Chicken, Pork, Beef……
You can also serve them “loaded” with cheddar cheese, bacon, green onions and sour cream on top.
Just fabulous!
I made them last week to go with a very easy, delicious pork recipe that will be sharing with you tomorrow.

NOTE: You can make this recipe more healthy by adding only 1 T of the butter and using about 1/2 C chicken broth in place of some of the milk.
Mashed Potatoes with Roasted Garlic
Yield: 7 servings
Time: 30 minutes
Recipe from Jamie Cooks It Up!
8-10 medium sized red potatoes
5 T butter
4 cloves roasted garlic, smashed up
salt and pepper to taste
1/2 – 3/4 C milk

1. Wash your potatoes and then peel about half of the skin off. I like to have just a bit of texture and so I leave some of the skins on. This only works with red potatoes. Russet potato skin is too thick…so don’t try it with the Russets, you’ll get more texture than you’re hoping for.

2. Chop them into 1 inch cubes and boil for about 15 minutes, or until tender.
3. Mix with the other ingredients in your kitchen aid, or with hand held beaters, until nice and fluffy.
