Ingredients

  • Salad:
  • 2 chicken breasts
  • 1/2 C BBQ sauce
  • 2 bags Spring Mix lettuce or 1 large head romaine lettuce, chopped
  • 1/2 bunch cilantro
  • 1/2 bunch green onions
  • 1 can black beans, drained
  • 1 can corn, drained
  • 2 red bell peppers, chopped
  • 2 C cheddar cheese, cubed
  • 1 lime
  • 3 C crumbled tortilla chips
  • Dressing:
  • 1 1/2 C ranch dressing
  • 3/4 C BBQ Sauce (I like Sweet Baby Rays)

Instructions

  1. Preheat your oven to 400 degrees.
  2. Spray a 9x9 dish with cooking spray and place your chicken breasts into it. Drizzle with the BBQ sauce. Cover and bake for 30-40 minutes or until cooked through. Remove from the oven and allow it to rest for 10 minutes. Cut into chunks with a sharp knife and stir it all together so the sauce coveres each piece of chicken.  Allow it to cool completely.
  3. Into a large salad bowl, place the lettuce, cilantro, green onions, black beans, corn, bell peppers and cheese.
  4. In a separate bowl combine the BBQ sauce and ranch dressing until smooth and well combined.
  5. Just before serving, add the chicken and crumbled tortilla chips. Squeeze the lime juice over the top.
  6. Add the dressing to individual servings, just before you serve.

  1. Hello Jamie, first I have to say that you are my go-to girl when I need to make supper. I’ve tried so many of your recipes and they are always delicious. This is one of our favorites. We keep a bottle of the dressing in our fridge at all time. We have dubbed it “Awesome Sauce” and we use it on everything–hot dogs, sandwiches, salads, even to dip our taquitos in. So yummy!!

    1. Hi Tammy,
Thanks for your kind words. So happy to hear the recipes are turning out so well for you and your family. Such a great idea, to keep the dressing for this salad handy for other things. I’ll have to try it. Thanks for the suggestion!
      All the best,
      ~Jamie

  2. Your comment about “soggy salads” at potlucks is SO important I made that mistake last year at our summer ward R.S. social, after spending $$ on ingredients and time making a strawberry spinach salad, I added the expensive balsamic vinegar dressing (that I had bought in a botique in Breckenridge) before leaving home. The social started late due to waiting for a thunderstorm to go over (this was outside due to still having Covid restrictions). By the time we ate, no one wanted my expensive salad!
