Turkey and Cucumber Sandwiches

My lovely sister in law Mary taught me to make these easy, delicious sandwiches. She learned to make them 
from her Mother in Law  (hello Jeanne!)
who used to run a wedding business.
They are a wonderful, fast way to feed a large crowd at a wedding, shower, ladies lunch, book club, church luncheon, school party, family reunion, picnic, summertime get together…..you name it!
You could eat them on a plane
or in a train
You could eat them here or there
you could eat them anywhere….
And they taste much better than green eggs and ham!
That Sam-I-am….I’m not sure I would have, could have either…! 
Turkey and Cucumber Sandwiches
 Time: 10 minutes
Yield: 10 sandwiches
Recipe from Jeanne Ehrhart
10 rolls
10 slices turkey
1 cucumber
3/4 C mayonnaise (Best Foods light works well)
1 t soy sauce
*Note: These sandwiches are best if made just before serving. If you plan to make them for a large crowd (not just for you and Sam-I-am) you can slice the cucumbers and make the sauce up to a day ahead, then the assembly will be quick. 
1. With a vegetable peeler cut four stripes along the sides for the cucumber. Then slice the cucumber into thin rings.
2. Mix the mayonnaise and soy sauce together.
 
3. Spread the sauce on the rolls. Top with turkey and several cucumbers. 
Enjoy!

Cute sandwiches! So easy to throw together, and I love how you mixed soy sauce into the mayo. I have a few little get-togethers and showers coming up, these would be perfect for them. 🙂

Mayo and soy! I like that little touch of Asian umami. Bet it makes the sammy taste even more hearty.

Simple, yet delicious and even your parents and some of your can do it on their free time before the reception, and with lots of those, you can feed a lot of guests without even spending much. My best friend went to that route, when they got wed with her long-time boyfriend in San Francisco, they served home cooked meals instead of catered, since she knows that everybody loves her mother's meals. Also, the party is outdoors with a tent (which was on rental, in addition to the tables and chairs) giving us shade on a sunny day, to have more of a accommodating feel to it.
