Strawberry Mango Popsicles

Boy, is it hot!
It must be summer or something?!
We’ve been spending a lot of time in the car lately, 
my children and I. 
(Lot of road trips…)
We’ve been burning a hole through the Glee soundtrack I keep handy in my minivan.
Love Glee by the way…
love the music…
can’t get enough of the music….
great show tunes…
awesome pop stuff….
JOURNEY, I love you…..
Hey Mr.Producer, I’m talkin’ to you sir… couldn’t you make the show less trashy?

There’s something for everyone on my Glee soundtrack, folks.
“Another One Bites The Dust” has been heard no less than 7 bajillion times during the past month. 
(TwinBoys Favorite)
These two little boys have entered into the WHY? phase. 
You know the phase I’m talking about.
Where the car ride conversation goes something like this….
 
“When we get home it’s going to be time for bed guys.” 
said the mother.
And then,
a riddle of questions poured out of two little mouths.
“Why do we go to bed?”
“Where do the clouds sleep?”
“Who is going to put those houses to bed?”
“Let’s hear Another One Bites the Dust again!”
“Why don’t those lights on the street have to sleep?”
“Why doesn’t Grandma Pam sleep in my bed?”
“MOM! Another One Bites the Dust again!”
“Why doesn’t Heavenly Father put the clouds to bed?”
“Why doesn’t that house lay down in a bed to sleep?”
“Why don’t I sleep outside like a house?”
“Turn on Another One Bites The Dust again!”
“Why do the trees just stay outside when it’s dark?”
After answering 8 bajillion questions in 10 minutes time, 
my response to the last questions was….
“I’m not sure. I’ll have to google it.
Google never bites the dust.….”
 
“Mom?” LittleTwinBoyAaron asks,
“Why doesn’t google bite the dust?”
 
 
These Strawberry Mango Popsicles 
are going to have you singing a pretty tune, folks. 
Pretty indeed!
They are fresh tasting and DEEEElicious.
All seven individuals living on the premises 
could not get enough of them. 
You could make them with many different kinds of fruit. Strawberries and Mangos were just the 
fruits we had on hand that needed to be used up.
WHY? did I only have strawberries and mango, you ask?
I can’t remember, 
and neither can Mr.Google.
For some things….there just aren’t any answers.
 
 
Strawberry Mango Popsicles
Time: 15 minutes prep + 6 hours freezing
Yield: 15 little Popsicles
Recipe created by Jamie Cooks It Up! 
1 1/2 lbs fresh strawberries
1/2 lime, juiced
1/3 C sugar
tiny splash of balsamic vinegar (optional, though wonderful)
dash salt
1 C vanilla yogurt
1 mango
1/4 C sugar
1/2 lime, juiced
dash salt
12 small Dixie cups
12 Popsicle sticks
1. Cut the green tops off of the strawberries. In a small food processor or blender puree the strawberries until they are as smooth as you can get them. Add the 1/3 C sugar, lime juice, dash salt and balsamic vinegar. Blend it all up until it’s smooth and lovely and pour it into a small mixing bowl.
2. Cut up your mango and add it to your small food processor. Add the 1/4 C sugar, lime juice, and dash of salt. Blend it up pretty as a picture
.
3. Pour just a bit of the strawberry puree into each cup. Add a dab of yogurt, and a plop of mango puree. Pour a bit of strawberry on the top. Add your Popsicle stick to the cup and give it all a bit of a stir.
4. Place in your freezer and let them set up. It should take at least hours.

I love the layering in these- they look so cool and refreshing! What a great way to get in all of those fruit servings. (We'll just overlook the sugar part.) 🙂

I just came across your blog from a suggestion of my neighbor, Kim McCann, and can I just say, YUM!!! I think I might just have to start planning my dinner menu's based on your blog because everything looks SO delicious!!! Can't wait to try these recipes, I just can't decide which one to try first!! I will be anxiously following to see what is next=)
