Hello everyone! I sure hope you had a wonderful Christmas Day.
Those of us here, under this very roof have had a marvelous time.
We’ve spent time enjoying family, food, great conversation, singing round the piano, exchanging gifts and just plain loving the holiday. It’s always a little bit of a relief when all the presents are unwrapped and everyone has a big fat smile on their face! Speaking of smiles….I have a little Christmas story for you today. (Keep scrolling down if you hate cute stories and just want to get to the Meatball recipe. I won’t hold it against you, cross my heart.) If you have been around these parts before, you know I can’t resist telling a cute story now and then. Here you have it!
One of the gifts we gave our 5 kids this Christmas was a Wii.
Alright, so I know they have been around since your grandma was in high school and are no longer cutting edge. What can I say, other than…we are kind of cheap….and Wiis just got cheap this year.
I’d venture to say that while we are playing our very basic games of golf and tennis you just might be Rock Banding the house down and getting really Wii Fit. 
Does this lesson our pleasure? Heavens no! Maybe next year we will be really cool, really fit, rock stars. Until then bring on the bowling.
Just this evening we were teaching our LittleTwinBoys to play the Wii bowling game. One LittleTwinBoy picked it up super quickly and was bringing the pins down with flair. The other
LittleTwinBoy….well lets just say, the poor boy had a struggle. Three of us took turns for a the better part of 30 minutes trying to explain how to release the ball without chopping the heads off the viewers. After he had dropped the ball for the 7 millionth time he sighed and said, 
“Gosh guys, how come you’re teaching
me to have such bad manners.”
 
Well. 
I’m not really sure.
Doesn’t seem like a good idea to teach a kid bad manners, does it? Kids with bad manners aren’t that enjoyable to be around, in fact.
Bowling lesson number one, done. Wouldn’t want to inflict bad manners on anyone!
 

Let me just add….these Meatballs are REALLY REALLY good. I dare say not a person eating them would be tempted to have bad manners. They are a real crowd pleasing, kid pleasing, adult pleasing, poke your appetizer with a toothpick pleasing, party lovin’ kind of dish. They only take about 20 minutes of prep work and then an hour to simmer in the Crock Pot. Another bonus, I’d say. Just try and have bad manners about that one!

 
Hawaiian Meatballs
Time: 20 minutes prep + 1 hour cooking
Yield: 10 servings
Recipe from My Handsome Husband
2 green peppers
1 1/2 onion
1  20 oz can pineapple chunks
1/2 C white sugar
1 T apple cider vinegar
1/2 T salt
black pepper, just a couple of sprinkles
1 T soy sauce
1/4 C brown sugar
3 T cornstarch
1/2 C cold water
3 pounds fully cooked meatballs (I purchase mine at Costco in the freezer section)
 
1. Chop up your green peppers and the onion. Add 1 T of olive oil to a hot skillet. Throw in your veggies and saute until they are just a bit wilted.
2. Pour the juice from your can of pineapple into a medium sized bowl. Add the white sugar, apple cider vinegar, salt pepper, soy sauce and brown sugar. Mix with a wire whisk until the sugars have dissolved and everything is mixed well.
3. Add the sauce to the veggies. Stir it around and bring it to a boil.
4. In a small bowl combine the cold water and cornstarch. Mix until smooth.
5. Pour the water/cornstarch mixture into the sauce just a little bit at a time. Stir it in and let the sauce come to a boil. The water/cornstarch mixture is a thickener…keep adding it to your sauce until you have a texture similar to thick syrup. You may not end up using it all.
6. Pour the meatballs into a crock pot that has been sprayed with cooking spray. 
7. Add the pineapple chunks into your sauce and then pour it over the top of the meatballs.
8. Cook in your crock pot on high for 1 hour.
 
Leave it in the Crock Pot and serve as an appetizer, or serve it over rice for dinner! Enjoy!

  1. These are delicious! I did not have time for the hour in the crock pot, so I put them covered in the oven at 350 for about 25 min as my rice cooked. I'm sure they would be better in the crock pot, but we really enjoyed them!! Thanks for sharing!!

  2. Delish. Made for a party last night and they were a hit. They were still cold after an hour in my crock pot, so I put the insert into the microwave for about 15mins, then put back into the crock pot. They turned out great, held up well( didn't turn soft and mushy)and really good flavor. This one is a sure fire keeper for both a party or for a main dish meal w/ rice. YUM.

    I do have a (stupid) question: Do you add the meatballs frozen or do you let them thaw before adding them to the crockpot? Thanks!

      Either way would be fine. It will just take a little longer for them to heat through if you add them frozen. Good luck!

  5. I’ve started making some frozen meals for my brother who is single for Christmas each year. He seems to enjoy eating some things he wouldn’t make for himself. I’m not real knowledgeable in the kitchen so please tell me if this would make a good freezer meal!

  7. You have this as a freezer safe recipe. Would the best thing be to make the sauce and freeze separately and then combine at cooking time?
