Honey Wheat Pizza Crust

So I have been thinking lately about how to incorporate a little bit more wheat….into some great from scratch recipes.
I am always trying to sneak it in…
If my kids look at the finished product and say,
“Is this wheat, Mom?” 
Well then, it’s pretty much a lost cause.
However, if they don’t notice it…
…and they take a bite unsuspectingly…
Well then, I am a shoe in.
If they say
“Tastes great,
make it again,
this is really good, Mom.”
I just smile and say
“So glad you like it. It. Has. Wheat flour in it.”
So there…hardy-har-har-har.
De har har.
Har. 
This Honey Wheat Pizza Crust one of those recipes! The pizza dough has a slightly sweet flavor (hence the honey) and a more wholesome texture than regular white crust pizza.
Now, don’t get me wrong….
I love this all white flour Fabulous Pizza Crust.
It is really, really, good.
But sometimes I just want a bit more wheat. 
Because they say it’s good for you. 
And will cure diseases, and make geniuses out of small children, 
and save lives, or something like that.
Feeding my kids flour that will save lives, or something like that,
….is a bonus. 
 
What should we put on top of this yummy crust?
Whatever your sweet little heart desires.
My sweet little heart desired some savory, smokey-sweet toppings.

Pizza Toppings….a real cliff hanger.
 
 
 
1. Pour the yeast over the top of your warm water. Don’t stir….

 

 

Just let it fall like snow. 
Which is what LittleTwinBoyAaron called it. Falling snow. He’s like a genius or something. I bet his really beautiful mother has been feeding him wheat flour.



2. Pour your wheat flour and your white flour into your stand mixer. Add the salt and stir it around a bit. 

 

 

Give a little smile…because you are making your children into geniuses, and saving their lives. Wow. What a productive day!



3. Pour the oil into the flour. Let your mixer combine it all up, nice and pasty like.



4. Add your honey.





5. Add the water and yeast mixture. Mix it all until it is combined. No need to let it knead for a long period of time. Just get it mixed up well. Cover it with some plastic wrap and let it rise for at least 2 hours. You can also put it in the fridge if you aren’t planning on using it until later that day. You can actually leave it in the fridge for several days and it will just get better with age. 





6. Divide the dough in half. Pour some olive oil onto a pizza stone, or any other kind of baking sheet. A stone is not required. Let the dough hang out there for about 5 minutes. Then stretch the dough out to the edges of the pan.
7. Cover with sauce and pizza toppings. Bake at 425 degrees for about 15 minutest, or until the cheese is bubbly and the underside of the crust is golden brown. (Yes, this hot temperature is correct. Your crust will love it. You will love it. Your kids will love it.)

Ingredients

Your little helper is so cute. I am doing my new no fail pizza crust tonight and I too and sneakng in half wheat flour without telling. I am sure it will be fine. What toppings did you have on your pizza Jamie? it look fabulous.

Great job, Dr. Davis. You knew you had time for only a few short sound bites, and you stayed on megssae, stayed focussed on the important points, and brought some appealing recipes to share. Ending with Kelly saying Get the book it will change your life was high praise from someone who started at first saying she could never remove wheat from her diet. It’s the type of short exposure with just enough hooks that people should want to know more visit your blog and buy the book. Perfect for the time allowed for this type of audience.
