make this Raspberry Cream Cheese and Pretzels Salad.

I got this recipe out of a wonderful cookbook I have been reading.
Bless Your Heart
recipes by Patsy Caldwell and stories by Amy Lyles Wilson. The recipes in this book are very family friendly and look delicious. Fabulous food isn’t the only treasure lingering in the pages. There are great stories written throughout that I thoroughly enjoyed reading. It is a heartwarming read, to be truthful.

One entry per person.
 
1. Throw those pretzels in a small food processor and grind them into coarse crumbs. 
 
2. Add your melted butter and 3 T sugar. Mix until combined.
3. Press the pretzel mixture into a 9×13 pan and bake at 400 degrees for 13 minutes, or until golden brown. Remove from the oven and let it cool completely.
 
4. In your stand mixer, or in a medium sized mixing bowl beat the cream cheese until smooth.  Add your sugar and mix for about 4 minutes.
 
5. Add the cool whip and mix for one minute, or until everything is well combined.
 
6. Heat your water up in the microwave until it is boiling. Add the jello and stir until it is all nice and dissolved. 
 
7. Pour in your raspberries and stir to combine. Place the bowl in your fridge until the mixture has thickened up a bit. (Like syrup, at least. If it has set up more that that…no worries. The recipe will still be wonderful.)
8. Spread the cream cheese mixture over the top of the crust. 
 
9. Pour the beautiful raspberry jello on top, cover and chill for at least 4 hours.

Ingredients

  • 2 1/2 C pretzels
  • 3/4 C butter, melted
  • 3 T sugar
  • 1  8 oz package cream cheese, softened

I am one of those that usually brings chips or a quick dessert like brownies from a box. But my mother in law makes this wonderful salad with romain, sugared almons and manderin oranges. MMMMMM!

I always like to bring Boston Creme cupcakes to our family gatherings.

I've made strawberry pretzel salad before and am now anxious to try it with raspberries. I think I will make it for Easter dinner to serve with my ham and scalloped potatoes. Love to try new recipes!!

I like to take a cup of sour cream, cottage cheese and mayo and mix that with 3-4 T. ranch powder and mix it all together, then you serve that yummy dip with either chips or a veggie tray and it is an easy tasty treat for all!

Depending on the occasion, I usually bring a baked pasta where I “hide” pumpkin puree in tomato sauce and for dessert I usually bring homemade cupcakes w/ homemade cream cheese frosting or a homemade cheesecake w/ fresh raspberries on the bottom….yummy! Depending on the celebration, we are usually asked to bring Dutch Oven Ribs. The exception to this rule is Thanksgiving, and in that instance we are usually asked to do pies. It is always fun to see how the family reacts to the various things that we cook. Thanks for all of the recipes and ideas! I am always looking for something new to try!

I always get requests for my potatoe salad- my oldest brother said it's the best he has EVER tasted! I also love to bring carrot cake with yummy cream cheese frosting! I plan on making the raspberry recipe with strawberries for Easter dinner!

I love bringing my made from scratch two bite brownies. The kids love it. I have a great icing that I pipe on top and add a mini Hersey kiss in the middle. Easy and always a hit.

It's a salad called “celebration salad” I know, original. It's a fruit and cream salad. We have it at ALL family gatherings and I bring it when we go somewhere because to me, when I get to spend time with my friends, it's a celebration!

I usually attend cookouts that have various ethnic dishes but when I am asked to bring food its a collective of things collard greens, deviled eggs, potato salad and most of all strawberry swirl cake.

depends on what I'm bringing a dish for….

most holidays I get loaded with broccoli casserole (one of my favorite dishes at ANY holiday)

sometimes I make ranch potatoes (potatoes, sour cream, ranch dressing, bacon and LOTS of cheese -it's NOT a diet food people!)

fruit salad! (i make mine with pineapple juice and vanilla pudding mixed together with whatever fruit I feel like)

but my favorite dish …. to BRING somewhere is probably…. cheese and salsa dip with tortilla scoops – nom nom

I always take “fluff” you know the contraption of jello's and fruit and coolwhip. I always try to have these ingredients on hand and it is a yummy desert that never has leftovers.

When we take a dessert, we are frequently asked to take my grandmother's English Triffle. It has delicious layers of Angel food cake, vanilla pudding, jello, whipped cream, and berries (strawberries, raspberries, blueberries, blackberries). It is heavenly!!
