This wonderful recipe for LumberJack Baked Beans has been one of our summer staples for nearly a decade. I know many of you have made it for years as well. I’ve updated it with new pictures and a more simplified cooking method today.

Please be aware, that bacon and onions are involved.
As well as a sweet and tangy sauce that is out of this world. Several kinds of beans are included, making it pretty to look at. I hope you get a chance to try them!

Ingredients

  • 8 slices bacon, cut into 1 inch pieces
  • 1 small onion, chopped
  • 1 3/4 C brown sugar
  • 1/3 C plus 2 T apple cider vinegar
  • 1 1/2 t dry mustard
  • 1 1/2 t ginger
  • 1 1/2 t salt
  • 1  16 oz can butter beans
  • 1  16 oz can pinto beans
  • 1  16 oz can red kidney beans
  • 1  30 oz can Bush's Homestyle Baked Beans

Instructions

1. Toss the bacon pieces and chopped onion into a large skillet and cook over medium high heat until the onions are wilted. 
2. While your onions and bacon cook, grab a large glass measuring cup and stir together the brown sugar, apple cider vinegar, dry mustard, ginger and salt. 
3. Pour the sauce over the wilted onions and cooked bacon. 
4. Drain and rinse your butter, pinto and kidney beans and add them to the skillet. 
5. Open up your can of baked beans. Pour the whole can, sauce and all into the skillet. 
8. Give everything a nice stir and allow it to simmer for about 10 minutes, then pour into a 3 quart casserole dish. 
9. Cover your dish and bake at 350 degrees for 1 hour. Remove the dish from the oven, give the beans a stir and put the old girl right back in, uncovered this time. Cook for 5-10 more minutes. Or, cook them in your Crock Pot on low for 3-4 hours.
