Oatmeal Butterscotch Cookies

Five Reasons 
to be happy about terrible spring weather
and
SNOW over Memorial Day Weekend.
1. My tulips have lasted 500 times longer than usual.
Hallelujia.
2. I haven’t had to purchase any shorts for my 
kids to wear to school.
3. I haven’t had to turn on the central air.
That’s money in the bank, however I have had the heat running all month…
so “money in the bank” may be incorrect here.
 
4. I haven’t had to turn on my sprinklers yet and my grass has never seen a greener spring. 
That is money in the bank….any way you look at it.
5. It has rained so continually and constantly that I can’t get out in the yard 
to 
pull 
my 
weeds. 
Ok, that’s really a negative since I loath looking at weeds. But I’m out of good things here. I could really only come up with 4 reasons to be happy about the terrible weather this spring….and I promised you 5 and all.
 
So maybe, it’s never going to get warm.
Maybe we will be doomed to rain and gloom for the rest of eternity.
Maybe my weeds will grow to be as tall as my house, cover up my door and I’ll just have to stay buried in here for the rest of my life.
Maybe. 
Or maybe it will be bright and sunny today!
And I can take my chain saw out in the back yard and get to work on the weeds. 
Don’t hold your breath. 
Would you rather stay cozy warm in your kitchen and make some fabulous cookies?
Me too. 
These Oatmeal Butterscotch Cookies have been MyHandsomeHusbands favorite, his whole life long. 
Last week I made some…
Because he loves them.
And because I hate weeds. 
And because I hate pulling weeds in the rain.
And don’t even get me started on how much I would hate to pull weeds in the snow. 
Hope you love these cookies.
Here’s to baking in the snowy spring!
Something to be happy about, indeed.  
 
 
1. Toss your butter, sugar and brown sugar into your stand mixer or into a large mixing bowl. Cream together for at least 3 minutes.
2. Add the eggs and vanilla and cream for another 3 minutes.
3. In a separate bowl combine flour, baking soda, baking powder, salt and cinnamon. Stir it up to combine. Toss your oatmeal in and stir it around to incorporate. 
4. Add the dry ingredients to your creamed mixture. Mix until combined, about 1 minute. 
5. Toss in your butterscotch chips
and your raisins. Mix just until combined. 
6. Roll the dough into balls and place them on a cookie sheet sprayed with cooking spray. 
7. Bake at 350 degrees for approximately 8 minutes. DO NOT OVER BAKE! In fact….these babies are just perfect if you take them out of the oven just after the cookies begin to crack. Let them rest and cool for several minutes on the hot cookie sheet. Remove to a wire rack to finish cooling.

Ingredients

  • 1 C butter, softened
  • 1 C sugar
  • 1 C brown sugar
  • 2 eggs
  • 2 t vanilla
  • 2 C flour
  • 1 t salt

  • 3 C oatmeal (quick cooking variety is best)
  • 1   11 oz butterscotch chips
  • 1 C raisins
  •

These look so yummy! I crave oatmeal cookies. I love to weed after it's rained, everything comes out so much easier. You just have to wear gloves or accept that you'll get muddy. I think it saves time and energy! 🙂

Southeast Idaho is in the exact same weather funk! I swear we are going to up and float away one of these days! My garden spot has been calling my name for week's, but it won't stop raining long enough to plant. Oh, and we have had the heater revved up multiple times this last week (I'm still sleeping with fleece socks on, for Pete's sake). Pray this ends soon, I have Girl's camp in three weeks, and I am not particularly fond of nature (or wet teenage girl's) in the rain! On the happy side, cookie baking during the rain is.the.BOMB (and oatmeal butterscotch is my all time fave)!

My yard's starting to be a jungle too. Thank goodness this week is clearing up and I can get the mower out.

The cookies look delicious – except I have to make two different versions at my house. Adam doesn't like raisins – he's certainly missing out.

Even thougth it is 95 degrees and blazing hot here in Texas, I couldn't resist making these cookies. I have to tell you they were deluxe. My family and book club friends are sure to love them! I've never had raisen AND butterscotch in the same cookie, but man, what a combo! Thanks for the great recipe! I will make them again!

These cookies were yummy, just a little too sweet for me and my family. I really liked the oatmeal cookie base though, so next time I will substitute butterscotch chips for chocolate.
