Hello and how the heck are ya?
Doing well, I hope!
This morning dawns the beginning
of a new school year for my two oldest kids.
My poor middle daughter Emily has been back to school
for five weeks now.
Oh the blessing of year round school.
Not really fair is it?
The dear girl has reminded me no less than
7 bazillion
times how unfair it is
that she is
“……the ONLY one who has school, Mom.
My life is full of despair, it’s just not FAIR!
All the rest of you people are just home eating bon bons
and playing and having fun…
sob, sob,
sniffle
sniflle….
boo hoo.
waaaaaaaaahhhhhhh.”
Can you really blame her?
Life can be hard when you are 9 years old.

And so, for this full figured mother of five
having all three of my big kids back in school this morning
is a calm and quiet blessing.
Though I will miss them, let it be known for the record.
Since school is back in session…
And being that I have a sneaking suspicion
at least some of you have kids….

Hearty Breakfast Burritos
Time: 15 minutes
Yield: 8 servings
Recipe from Jamie Cooks It Up!
2 dozen eggs
splash of milk
salt and pepper
1 32 ounce bag Southern Potatoes
5 T butter
salt and pepper
8-10 large burrito style tortillas
Toppings:
diced ham
bacon
cheese
salsa
sour cream
BBQ sauce
ketchup
maple syrup
***NOTE: To make these Hearty Breakfast Burritos come together even quicker you can omit the potatoes. End of note.***
1. Crack your eggs and put them in a large mixing bowl. Add the splash of milk and a little salt and pepper. Whisk the eggs up until they are nice and frothy.
2. Heat up a large skillet over medium high heat. Spray it with cooking spray and pour your eggs right in.
3. Scrape the bottom of your pan until the eggs are cooked through.
4. While your eggs are cooking heat up another skillet and add the butter. Pour your hash browns in and cook them until they are golden brown.
5. Heat your tortillas in the microwave, or wrap them in tin foil and let them heat through in a warm oven.
6. Set out the tortillas, potatoes, eggs…..
some yummy toppings and let your family build a little bit of breakfast wonder.

My kid's love homemade muffins and yogurt (Tillamook or Kroger are the best). The other favorite is cream of wheat with a little dab of butter and some sugar added. YUM!

Our favorite breakfast is chocolate chip waffles.
I don't have kids yet, but one of my favorite go-to breakfasts are homemade egg mcmuffins. So great.

School days had to be quick and easy-usually cereal(hot or cold, depending on the season) or hard boiled egg and toast.
Peanut butter waffles.
My kids love breakfast burritos and breakfast pizza. However,on school days my son's favorite is french toast and sausage. 🙂 I make quite a bit of french toast and store the leftover in the freezer or refrigerator then we just pop it in the toaster on busy mornings. I also make up the sausage patties ahead of time and just rewarm them in the microwave.
Blueberry pancakes with real maple syrup is the breakfast of choice in our house these days.

Can't wait for some new breakfast recipes! My kids favorite breakfast is crepes with sliced bananas and strawberries, buttermilk syrup and homemade whipped cream.
My daughter's favorite is biscuits and gravy. My son's favorite is cold cereal.

I have 7 children so in my family they all usually like different things!!! However I would say the 2 major ones are in their words dip-able eggs. AKA Sunny side up and waffles .
Egg sandwiches are #1!
Our favorite is oatmeal with yogurt. I found this idea in a magazine for valentines. Cook your oatmeal. Place an open heart shaped cookie cutter in the bottom of a flat bottomed bowl. Spoon strawberry or raspberry yogurt into cookie cutter and spoon oatmeal around sides. Then remove cookie cutter. How cute a breakfast with a love theme. Now we just quickly dollop a spoonful of our favorite yogurt on top of the cooked oatmeal. [email protected]
The favorite at our house is anything cinnamon. We seem to have a fixation with it. We eat cinnamon breakfast cake, cinnamon french toast and homemade cinnamon rolls. We serve scrambled eggs with these choices of course!
My kids don't like to sit for breakfast – so it's usually anything that can be eaten on the go: go-gurt, toast, frozen waffles (sans syrup), nutri-grain bars – you get the picture.
On weekends we love to take family trips to Einstein's for family bagels.
My 8 year old loves left over pizza for breakfast, and lunch at school. Not super nutritional, but it makes her happy.

My 5 year old will eat cereal (any kind) My daughter is not much of a eat in the morning type of person (she takes after me) but I can get her to eat watermellon, bannana or a slide of toast.

My girls like pancakes for breakfast. I freeze a big batch of their favorite, then just pop them in the toaster for a quick home made breakfast. [email protected]
My kids would love to have french toast for breakfast everyday, but we usually go the cold cereal route because there just isn't enough time.
We love eggs in the morning. Any kind is good. OUr daughter loves the ones with onions and veggies in it.
We love anything with nutella spread on it…apples, bagels, oranges… etc.

If I can get them to eat before school, it is usually cold cereal or granola bar on the go.

My favorite breakfast is Tuesday morning when the children go to Grandpa's for breakfast. He cooks to order Crepes, Mickey Mouse waffles, or French Toast. They love it too, because otherwise it is cold cereal!

Amazing overnight waffles (made with yeast) for my grand kids. Make batter the night before and cook in waffle iron in the morning. Easy peasy! [email protected]

I make homemade saugage rolls w/ cheddar & jalapeno smoked saugsage links. YUM!!! I can't keep them in the house. Close second in homemade choco chip pancakes.

Breakfast is always cold cereal – but occasionally we have breakfast for dinner.
Most days it is cold cereal but I do like to make mini muffins and freeze them. Easy to take out and warm up!

Cereal is always nice and handy. But, my kids have always loved the breakfast casserole I do in my crockpot with scrambles eggs, hash browns, sausage, bacon and LOTS of Cheddar cheese. There are a lot of variatons that can be done with the recipe..It's great on Christmas and Easter morning…specially when there is a lot of sweet candy around. Oh, and it's great with salsa and sour cream. Gosh, it's making me hungry!–~Michelle

We are leaving tomorrow morning to take my daughter to university and I am feeling a little nostalgic, so I'll share a breakfast with you that she used to love. I'd put leftover hash browns in a coffee mug, crack an egg on top, salt and pepper, then shred a little cheese over the egg. Put a cover on the cup (I just use a small plate inverted) and microwave 3 to 5 minutes until the egg is cooked to your liking. She could grab the cup and eat it on the way to school if I drove her. I live in Canada so I probable don't qualify for your contest, but my email is [email protected].
My kids mostly eat cold cereal because I don't want to cook breakfast every day. I do try to have french toast or pancakes or waffles on the other days, sometimes I make sausage egg cheese muffins.

My kids love yogurt parfaits!! We cut fresh strawberries and place on bottom of tupperware container…add small container of vanilla yogurt…top with blueberres. We make several at a time and place in fridge for a yummy, quick & easy breakfast!

I love pancakes but my kids would rather just have cold cereal. So my thought is why in world do I want to put more work into something they don't really want when morning is crazy enough anyways? I at least try to buy the cold cereals that have at least 3grams of fiber in them so I feel like it is doing something good for them.
