Hello and how the heck are ya?
Doing well, I hope!
This morning dawns the beginning
of a new school year for my two oldest kids.
My poor middle daughter Emily has been back to school
for five weeks now.
Oh the blessing of year round school.
Not really fair is it?
The dear girl has reminded me no less than
7 bazillion
times how unfair it is
that she is
“……the ONLY one who has school, Mom.
My life is full of despair, it’s just not FAIR!
All the rest of you people are just home eating bon bons
and playing and having fun…
sob, sob,
sniffle
sniflle….
boo hoo.
waaaaaaaaahhhhhhh.”
Can you really blame her?
Life can be hard when you are 9 years old.

And so, for this full figured mother of five
having all three of my big kids back in school this morning
is a calm and quiet blessing.
Though I will miss them, let it be known for the record.
Since school is back in session…
And being that I have a sneaking suspicion
at least some of you have kids….

Hearty Breakfast Burritos
Time: 15 minutes
Yield: 8 servings
Recipe from Jamie Cooks It Up!
2 dozen eggs
splash of milk
salt and pepper
1 32 ounce bag Southern Potatoes
5 T butter
salt and pepper
8-10 large burrito style tortillas
Toppings:
diced ham
bacon
cheese
salsa
sour cream
BBQ sauce
ketchup
maple syrup
***NOTE: To make these Hearty Breakfast Burritos come together even quicker you can omit the potatoes. End of note.***
1. Crack your eggs and put them in a large mixing bowl. Add the splash of milk and a little salt and pepper. Whisk the eggs up until they are nice and frothy.
2. Heat up a large skillet over medium high heat. Spray it with cooking spray and pour your eggs right in.
3. Scrape the bottom of your pan until the eggs are cooked through.
4. While your eggs are cooking heat up another skillet and add the butter. Pour your hash browns in and cook them until they are golden brown.
5. Heat your tortillas in the microwave, or wrap them in tin foil and let them heat through in a warm oven.
6. Set out the tortillas, potatoes, eggs…..
some yummy toppings and let your family build a little bit of breakfast wonder.

Egg in the MIddle! (a piece of bread with center circle cut out, buttered with salt & pepper with egg cracked in the middle. Pan fry & flip…a childhood favorite from my Dad.

My daughter just turned four and will start preschool this September. Her favorite breakfast is yogurt with toast. Fast and healthy!

No kids in school but in the day they loved waffles.

My son's favorite breakfast – he is now 26 and in the Navy, coming home on leave next week – is a breakfast burrito containing scrambled eggs, bacon and salsa, baked on a pizza stone till it's nice and crispy.
Crepes, pancakes, puffed pancakes, eggs, bacon, sausage…anything that's not cold cereal which is the usual breakfast menu.

I'm usually gone by the time the kids are up for school, so breakfast has tobe something easy that dad can do. Usually cold cereal, waffles, cereal bars, Pop-Tarts, hard boiled eggs and toast with peanut butter are staples around here. I try to help the kids get out their breakfast food the night before, although that doesn't always work.
I found a small basket on clearance at Walmart and have started “packing” their breakfast in there so they can “grab-n-go” if there isn't time for toast or waffles.

Cereal is usually the breakfast of choice around here. But those breakfast burritos sound really yummy.
Sounds yummy!! My kids aren't much for breakfast, but I do try and make them eat something before heading out the door. It's usually just cold cereal and milk. Hopefully your recipes will get them away from cereal. =)

My kids LOVE the sausage (or bacon),egg and cheese biscuits. I make everything from scratch, assemble them, and store them in the freezer. It's easy for them and ME in the morning. They put them in the microwave unwrapped for 30 sec. then in the toaster oven for 5 min. I love easy!

biscuits and gravy are the favorite here…but only on sundays when dad's in charge. otherwise, it's toast, cold cereal, or a carnation instant breakfast.

We love cereal. Since everyone can choose a different kind, cereal is the best! I have one child who loves pancakes but not eggs and the other is the opposite. So, cereal is the best choice.
My son's favorite breakfast is anything that is not cold cereal. My husband makes breakfast much better than I so he is usually all over it! 🙂
My boys eat lots of different things for breakfast. I try to change it up but they like “flat” eggs with “runny yellow stuff.” As well as “round” eggs. They also loved your chocolate waffles and ask for them all the time.

My oldest always has cold cereal (but would prefer pancakes), and my youngest always has a banana, a piece of toast, and a cup of milk (but would prefer cheese, as that is the only food she REALLY likes).

People that don't live in the south (and some who do) will think this is gross, but livermush and scrambled eggs on sandwich bread is the bomb! My whole family loves this.

OOPS!…just realized I forgot to include my email in my comment (comment #7–My kids love breakfast burritos and breakfast pizza. However,on school days my son's favorite is french toast and sausage. 🙂 I make quite a bit of french toast and store the leftover in the freezer or refrigerator then we just pop it in the toaster on busy mornings. I also make up the sausage patties ahead of time and just rewarm them in the microwave.)

My little girl, at 13 months old, isn't in school and hasn't discovered the joys of favorites. 🙂 She does love instant oatmeal with fruit, yogurt, and any fruit she can get her hands on. My hubby and I love breakfast foods, though. My favorite would probably be Swedish Pancakes or breakfast casseroles with eggs, potatoes, meat. Yum!

My grandchildren LOVE cheesy egg burritos, they're made at least 3x week, & if I have leftovers I freeze them (they love them anyway).

I have 4 kids and they all love different things! I've got a yogurt and toast lover, oatmeal lover, waffle lover, and anything with eggs lover!! It's awesome and an adventure!! Can't wait to try the burritos!

I asked my four kids and got a couple of answers. Puffed pancakes by a couple and eggs with bread in the pan from the others. We love breakfast around here and have it for dinner too! Your blog is great by the way:)

Are you kidding… 15yo DD “I'm getting ready I don't have time for breakfast. Leave me alone.” Great giveaway and this is a recipe that would be easy to fix on Sunday and reheat each morning. Then she could eat it on her way to school. Great recipe and thanks for the chance to win!

Variety Pancakes. Plain batter and then we add what everyone likes in separate bowls. I like mine blueberry or cherry, dad goes for chocolate chip and the kiddos like it when I write messages on them with edible markers and serve with homemade strawberry syrup and whip cream.
My sons favorite breakfast would be pancakes. Or breakfast puffs, but I don't make those on school days. My daughter just started kindergarten this week and is blowing me away because she doesn't want to eat breakfast…she always wants to eat breakfast. She loves breakfast burritos, oatmeal, and cereal. We're going to try to start doing more smoothies (any recipes for those would be appreciated!).

Each of us is different. Two like pancakes, two prefer cold cereal, and one will eat everything and anything and requests something different every day!
