Mini Turkey Loaves with Sweet and Savory Red Sauce

Mini Turkey Loaves with Sweet and Savory Red Sauce
Time: 10 minutes prep + 35 minutes baking
Yield: 12 mini loaves
Recipe adapted from Hellmann’s® Mayonnaise

PRINT RECIPE

2 1/2 pounds ground turkey
3/4 C Italian bread crumbs
2 packages Lipton onion soup mix
2 eggs
1/4 C water
1/2 C Best Foods® Mayonnaise
brown sugar
ketchup
1. Place your ground turkey into a large bowl.
2. Add the Best Foods® Mayonnaise…
bread crumbs…
Lipton Onion Soup mix…
eggs and water.
3. Stick your hands right on in there. Mix all of the ingredients together.
4. Spray two mini loaf pans with cooking spray. 
Sprinkle brown sugar along the bottom of each little compartment. 
5. Shape the meat into 12 little loaves and lay them over the brown sugar.
6. Drizzle ketchup along all four edges of each loaf.
7. Bake uncovered at 350 for 25 minutes. 
8. Remove the pans from the oven. Drizzle a bit more ketchup along the top of each loaf. Spoon some of the juices from the bottom up on to the top as well.
9. Bake for another 10 minutes.
10. Remove the pans from the oven, let the loaves sit for 10 minutes and serve.

Turkey pot pie is our go to recipe for Thanksgiving leftovers…it is a perfect way to use almost all of them!

I've got a couple favorite quick fix dinners…mummy dogs(hot dogs wrapped in bread dough and baked), and breakfast for dinner (especially pancakes) 🙂

My quick fix is spaghetti and meatballs. I always have homemade mini meatballs and sauce in the freezer. It's one meal that I know everyone will eat – a rare happening with my recently picky kids.

My quick fix is a pasta dinner with shells, cubed deli roasted chicken or turkey, sauteed mushrooms and leftover veggies such as broccoli. Heat up a jar of white sauce and it's done. My family thinks raves and think I slaved!

I scramble tofu with frozen veggies in ma po to fu sauce and either eat it by itself or serve with rice or noodles. It's fast and tasty. Thanks for the giveaway!

I’ve have 2 reasons for being itetresned in the book, both of them selfish. 🙂 First, I was intrigued by the “Doubleback” review and plan on finding a copy to read for myself, so if this story is a tie-in or just more information on the chracters, etc., I love that kind of stuff. I like getting a better understanding of what I’m reading, especially of the characters. Plus, I really like having all the “pieces” involved when I have a series.Second reason – I like having the hard-to-finds, the limited editions, the special books that not everyone else in the world is going to have also. Don’t know why really, but I do!

burritos is my quick go to dish… i always make sure I have tortillas on hand.. and anything in the fridge can become the filling… we sometimes pan fry them..

A lot of great advice to poesrcs. I attended a workshop recently that helped us develop and dissect the heart of our story or as you called it, the driving theme. It was very helpful to breakdown and understand, making sure it was a consistent thread in the tapestry of the story. Our quickest dinner idea is anything using brown rice. I make a lot of it each week and then portion it our into freezer bags and freeze them. I then rip off the bag and place it in a covered glass bowl and microwave it. Love it. We then just add a meat (which is usually previously frozen as well) and some veggies. I don't think there is anything faster than plain ole spaghetti! Especially if you can find a good ready-made jarred sauce you like and don't need to do anything to other than serve!

Have you made larger versions of this? I don't have mini loaf pans like that. What would be the cooking times for a larger loaf?

Hey Amy,
Nice to hear from you. You can make this into one regular sized loaf and it will turn out just as nicely. I would imagine you would need to bake it for about an hour. Good luck! Hope it turns out great.

I made it into two loaves (bread pan size) and I think it cooked for about an hour. Turned out delicious. In fact, I posted this on my blog about it:

Whenever Zach says “Mom, this was really good – put it on our 'make-again' list. Whose recipe was it?” I almost always respond – “Who do you think?” and then we both say “Jamie Cooks It Up”. Thanks for all the great recipes that feed a family of boys with left-overs!

[…] These potatoes are so simple to put together! Russet potatoes are diced, coated with a bit of melted butter and then tossed with Italian Bread crumbs, salt and pepper. Once baked the potatoes have a nice, crispy golden outside with a soft center.  Did I mention they were simple. Pretty sure I covered that one. Don’t be worried about them being simple in the flavor category though my friends. The crumb coating has a wonderful texture and gives the potatoes such a nice flavor.
