I made a little rainbow cake last week.
It wasn’t for my birthday…or for your birthday…
or for the birthday of any other fine person!
It was a cake made out of desperation, my friends.
I was desperate for a little color and sunshine. And since the sky was gray and brooding and since my boys and I had seen Star Wars for the ump-teenth time in a week (I’m starting to speak Chewbaccan) and since I had attempted several new dinner recipes that tasted disgusting and looked ugly…I was in a desperate state, as you can well imagine! It’s one thing to look like Chewbacca (have I mentioned that I have really unruly hair? It’s true. Don’t hold it against me, okay?) but when a girl starts to speak like him, well then there is nothing to do but throw your hairy hands in the air and bake a cheerful cake. Nothing at all, but that.
And so my boys and I, we baked this cake. And I thought you might like to see how to make it all happen. Just in case you are planning to have a birthday this year. 🙂 And if not, maybe you KNOW someone who will be having a birthday this year. And if that person likes cheerful cakes, well then you will be all set, won’t you.
Enjoy!

I'm going to have to try this. I was anticipating something alot more difficult with the rainbows of colors and was pleasantly surprised that it was this easy. So far I'm loving the Red Velvet Brownies and Grandma's Choc. Chip Cookies (ranked #1 here).
Hi! I just found your blog thru another blog yesterday as I was looking for an easy bread to go with spaghetti. I made your easy breadsticks lastnight and they are really easy and delicious, Thanks! Can't wait to try your other recipes…the rainbow cake looks so appealing…will try it maybe one of these days…just a tip I want to share with parchment paper on round pans, instead of drawing a line around the pan with a pencil…Tear off a square of parchment paper big enough to cover your cake pan. Fold in half, then fold in half again. Next, fold the square into a triangle. Hold the triangle to the center at the back of the pan. Mark where the paper meets the pan. Using a pair of scissors, cut the triangle along the marks you made in the previous step. Unfold and place the circle in a greased cake pan.
I might make this for my younger son's birthday next month. He's having friends over for a day of XBOX and wings (his favorite food!) and this cake would be a mighty fine ending to a great, fun day with friends! We'll use M&Ms to decorate teh top instead of skittles I think but I LOVE this idea! SO EASY!!!
Could I use a cupcake mix of white cake (instead of a full blown cake) and make just one layer??
Hi Jenn,
I'm not familiar with “Cupcake Mix”, but if you follow the instructions on the package and then just add the food coloring I think it would turn out great for you as a one layer cake. Good luck!

That is really interesting! I am sure my grandsons will love this one and helping to bake it. I love the M and M's on top, and it doesn't use the whole big package, so then I could eat the rest! Talk about getting cheered up….that would do it. Thanks for the recipe. A truly Fun Cake!
Oh Jamie, Jamie, Jamie, you have such fun and good recipes. I might look at this blog a little too much for the good of my health. Everyone compliments me that I make the best desserts…thanks to you. I love reading your blog and the personal aspect of it. I feel like I have already met you and you are a fun long-time friend. Thanks for letting all of us into your life. You always make me laugh with your posts. Can I tell you a little secret? I now feel like I can't make anything if it isn't from your blog. That is saying something because it used to be if my mom didn't make it then I didn't make it. In the recipe area I now look to your blog more then my mom's recipes or my mom. You are fabulous and have done a fabulous job with this blog and your recipes. I LOVE IT!!! Thank you so much!!
hey can this recipe be done using a 9×13 pan
Anonymous,
Yes, using a 9×13 pan would work just as well. Good luck! Hope you love it!

Thanks for the decorating tips (wax paper on the plate, crumb coating and refrigerating). I might actually have some success at making it look appetizing.
No WONDER you looked so cheerful when I ran into you today! This is gorgeous… so fun! Even if I didn't indulge, it would cheer me up just basking in all those colors as I made it. Great post!
I want to come live at your house. I love how good your food looks. I have yet to try many of the recipes (I am 9 months pregnant) but hope to have more energy soon! Keep up the beautiful, yummy work!!
Jamie,
This looks soooooooo good! I am definitely going to try this one out! On an unrelated note, I wanted to let you know that your ads recently have made it difficult to read the content of your blog. I understand that you get revenue from these ads and I'm in no way saying you should get rid of them, but when I have to click in two separate areas of an ad to get rid of it in addition to clicking away other ads in order to read your posts, it makes me frustrated. I'm not installing an ad blocker yet because I want to support you, but if the obnoxious ads continue, I will install the ad blocker and your will lose revenue. But, please keep posting your super yummy recipes! Thanks!
Teri
