Waffle Cone Fruit Cup with Vanilla Cream

Hello there, dear reader. Before we talk about todays recipe I wanted to make you aware of my latest sponsor, Abigails Bed and Breakfast Inn. This quaint and newly restored bed and breakfast is in Ashland, Oregon. If you are in the area, or are planning on traveling there in the future I recommend taking a look at what they have to offer.

And now, without further delay, I have a lovely recipe for you today.  As I mentioned in yesterdays post, I’ll be sharing several recipes and ideas this week perfect for hosting a wedding or baby shower.

These Waffle Cone Fruit Cups with Vanilla Cream couldn’t be simpler to put together. I chose to use strawberries, grapes and kiwis. You can, of course use whatever fruit you wish. They make for a pretty display and my guests seemed to really enjoy them. As did my twin boys who said “Wow! Thanks Mom! That is REALLY cool fruit!”, when I handed them a waffle fruit cup to eat while they sat in the sunshine on the back porch. Yes, you heard me. It is sunny here in Utah. Happy days are here again. Cool fruit and  sunshine…you can’t really beat that, can you? 🙂

Waffle Cone Fruit Cup with Vanilla Cream

Time: 15 minutes
Yield: 24 servings
Recipe from Jamie Cooks It Up! Idea from Pinterest

***NOTE: Fresh fruit, after it has been sliced, tends to get all juicy and runny. These cups are best prepared just before serving. Also, I used Keebler Waffle Cones for this recipe. I found them at Walmart for around $2.50 a box.

Fruit Cups:
24 waffle cones (2 boxes Keebler Waffle Cones)
2 pounds strawberries
5 large kiwis
2-3 pounds grapes

Vanilla Cream:
1 1/2 C vanilla yogurt (I like Yoplait)
3/4 C sour cream
1 T brown sugar
1/2 t lemon juice (bottled works fine)

***NOTE: The black and white floral basket liner, as well as the purple liner are actually just plastic table cloths I purchased at Walmart and Dollar Days. Then I cut them up and used them to line different baskets and bowls, to add a little color and fun to the party. The ribbon and tulle tied to the side of the basket is also from Dollar Days. Everything in the store costs one dollar, my friends. Makes it nice and cheap to make a party look pretty and fancy.

1. Place the waffle cones carefully in a large basket.

2. Slice up the fruit and distribute it evenly between the cones.

3. In a small bowl combine 1 1/2 cups vanilla yogurt, 3/4 cup sour cream, 1 tablespoon brown sugar and 1/2 teaspoon lemon juice. Stir it around with a spoon until all ingredients are combined.
4. Add a dollop of the vanilla cream into each cone.
Serve and enjoy!

Beautiful recipe but now–what about the waffle cones? Did you buy them or make them?

Do you serve forks or toothpicks with this or do you just take a big bite out of the side? Just wondering what works best, they look so fun and yummy!

Hi Kristin,
I served them with forks, but some people just ate them with no utensil.

How long do the cones hold up with the wet fruit in them?

Hi Marisa,
I made them just before the party started at 12 and people where still eating them as they walked out the door at 4. The cones had started to get a bit soft in some places, but they still tasted good.

HI Jamie,
First off, thank you for making easy recipes. I have THE pickiest 7 year old on earth, and many of your recipes I have made, he has eaten and even liked. WOW!
A quick question, I am going to use your idea for the basket liner, but I was wondering, how do you tie the bow like that? I can see there are 3 different ribbon/tule used. Do you tie each one seperately or do you tie them all together and then spread them apart? I admit I am not the craftiest person and I do struggle when it comes to these types of things. Any help is appreciated.
Thank you, and I have several recipes ear marked that I am looking forward to trying.

ShaNae,
Thanks for your kind words. 🙂 So glad the recipes have been turning out well for you and your family! I actually did a post with a tutorial on how to make the bows you see in the picture.

I thoroughly enjoy your recipes. The waffle cones remind me of what I did for my son’s Meet N Greet when he ran for Congress last year.
We bought plastic shot glasses. We cut red, green, yellow peppers into strips. Also used celery and carrot cut to fit the cups. We put ranch dressing in some, and we put chip dip in some. It was such a hit everyone is copying the idea. We were able to move around and mingle and no mess. How often have you been chatting with a plate of food and someone bumps you. Just thought you might like to know.

Can these be made ahead of time, without the vanilla cream of course?

Ferryal,
They are really best made just an hour or two before hand. The juice from the fruit will start to leak through the cone if they are left to sit for too long. Best of luck!
