Summertime, my friends. It’s knocking at your door. With it’s warm weather and fireworks and no homework and dip your toes in the lake and read a book and drink up the wonderful sunshine kind of attributes.
It’s a pretty great season. In fact I don’t think I have ever heard anyone say…boy, I really hate summer…can’t wait for it to be over…boo, hiss all of the fresh juicy watermelon and succulent grilled chicken is really killing me.
You’ve never heard anyone say those things either?
I knew it. It’s because summer is great, as I previously mentioned.
To celebrate the upcoming Memorial Day weekend and the soon to be enjoyed summer weather, I put together a very easy grilled chicken recipe for you today. My Mom always adds a bit of Orange Crush Soda to her chicken marinade. It’s really, really tasty. So, I thought I’d give it a try and share it with you. The carbonation in the soda acts as a tenderizer for the chicken. Combine it with soy sauce, a few basic seasonings, a bit of oil and you have a tasty treasure on your hands. The chicken is not overly sweet and very flavorful. Brush a little bit of BBQ sauce onto the chicken during the last few minutes of grilling and…holy cow. You are going to have one tasty summer dish on your hands. It’s simple enough for a weeknight dinner and tasty enough to serve to company.

We made this tonight (5/28) and all I can say is…. MAKE THESE!! NOW!!!! Do NOT pass go, do NOT collect $200! This is INCREDIBLE!!! My kids, who normally don't eat chicken or bbq sauce, ate their pieces clean! I used chicken thighs, since that was what I had on hand. The bones were picked clean! 🙂 Thank you for such a GREAT recipe!! This is going to be made again for SURE!!
