Gooey Sweet Coconut Chex Mix (The Bomb Diggity)

So, I am going to wager this isn’t the first time you’ve heard of this recipe.  Am I right?  Someone may have left a bag full on your doorstep last Christmas, or maybe your sister made it for a Girls Night Out. Perhaps your pretty Mother In Law brought it along to your family reunion? It’s one of those recipes that everyone loves. My family calls it…


The Bomb Diggity. 


Seriously. 


We say things like…


“Hey, who is going to bring The Bomb Diggity this weekend to the lake.”


or


“Please pass The Bomb Diggity.”


And sometimes if we get a REAL craving for the stuff and we just happen to be sitting in a car at a stop light, we roll down the window and ask the folks in the car next to us…


“Would you happen to have any Grey Poupon Bomb Diggity.”


We’re really polite like that.

If you haven’t ever tried it, man…I hope you will. It’s the perfect crowd pleasing, take a long treat. 

Gooey Sweet Coconut Chex Mix (The Bomb Diggity)
Time:15 minutes hands on + 20 minutes to set
Yield: about 15 cups

***NOTE: You can add other things to this as well. White Chocolate Chips, Cashews or Milk Chocolate Chips work nicely. 


***ANOTHER NOTE: I purchased the little cups it the pictures at my local grocery store. (Smiths)


6 C Corn Chex Cereal
6 C Golden Graham Cereal
1 C slivered almonds
1 C sweetened coconut
1 C butter
1 C light corn syrup

1 C sugar

 



1. Line two large baking sheets with parchment paper, or wax paper. If you don’t have either of these, just spray the sheets with cooking spray and call it good. 

2. Find your self some Corn Chex Cereal and some Golden Grahams Cereal. Toss 6 cups of each into a large mixing bowl. 

3. Add 1 cup of coconut, 

and 1 cup of slivered almonds.

4. Take a big wooden spoon and give it all a nice stir. 

5. Into a medium sized sauce pan place 1 cup butter, 1 cup sugar and 1 cup light corn syrup. 

6. Get the pan to the stove and bring it to a boil over medium high heat, stirring constantly. Let it boil for 4 minutes (keep stirring, won’t you?). 



7. Pour the sugary sweet gooey delight from the pan over the top of the cereal/coconut mixture.

8. Stir the mixture well, making sure all of the cereal gets coated. 

9. Pour the mix out onto the lined cookie sheets. Let the yummy concoction cool and set for about 15-20 minutes. Don’t be tempted to leave it in the your mixing bowl. It will stick together like crazy. Letting it set up on the sheets works a lot better. Once it has set up a bit, break it into chunks and store it in an airtight container.

OMG! This is so good! Made it last night and can’t stop eating it! I added a teaspoon of coconut extract just to bring out a bit more coconut flavor. So easy and so very very yummy!

We call this CRACK. LOL Although it is highly inappropriate for my kids to say they “want more crack!”
I may have to change it to Bomb Diggity…..

We call this “crack” cause it’s just addictive like that.. which was awesome until my four year old started getting hyper with the “I want CRACK” in the middle of the store when we had ran out.. .OOPS.
