A couple of weeks ago some friends came to stay with me at Bear Lake. We laughed and played and visited and ate some fabulous food. My friend Pam made some amazing German Pancakes with Cinnamon Syrup for us to feast our selves upon. Good glory they were good! I told them all that I had never made, nor eaten, nor seen a German Pancake in my entire life. This is the very true truth.
My friends were happy to share some advise about making these babies.
I was only happy as can be to do a little bit of German Pancake practicing. A girl can always use a little bit of diversity in her breakfast line up you know. 🙂 I would imagine that many of you are German Pancake Making professionals, but for those of you who are not I would admonish you to give them a try. Make them, folks. Make them today and tomorrow and next week. They are so very simple to put together, and use ingredients you most likely have in your possession right this very second. My kids gobbled up an entire pan full. They taste different from traditional pancakes. There are more eggs added to the batter so the texture is more moist and substantial. The batter is then poured over thinly sliced apples and baked which creates a puffy golden pancake of wonder. Make them with the Cinnamon Syrup I posted yesterday, and life will be a beautiful thing to behold.
And that, is the very true truth.
Let me show you how to make it happen!
1. Preheat your oven to 450 degrees.
2. Grab a blender (I use this Ninga that I can’t say enough fabulous things about). Carefully crack 6 eggs and place them into it.
3. Add 1 cup of milk, I used 1%…for the very important reason that 1% milk is the kind I buy and keep on hand. Feel free to use what ever percent suits your fancy.
4. Toss in 1/4 teaspoon of salt,
2 tablespoons of sugar
and 1 cup of flour. Blend it for just a few seconds so that the eggs have a chance to get covered up before you add the hot melted butter.
5. Add 4 tablespoons of melted butter
and blend it all up for about 1 minute, or until everything is well combined and a bit frothy.
6. Peel and thinly slice 3 small apples. Please be aware that you may use 2 large apples or 1 giant-sized apple. You just need about 1 1/2-2 cups of apples…give or take a few.
7. Spray a 9×13 pan with cooking spray and lay the apples out along the bottom.
8. Pour the pancake batter over the top of the apples.
9. Pop it into the oven (uncovered) and let it bake away for about 20 minutes…
or until it is cooked through and gloriously golden along the top and the bottom.
10. Allow it to rest for about 5 minutes before you cut into it. The puffiness will go down just a bit.
Then slice it…
and drizzle the day lights out of it with some homemade Cinnamon Syrup.
