Can you believe the summer is over and school has begun! It’s amazing how fast time seems to fly by.

Just look at these three yahoos on the first day of school. Is it just me or do they look like they could become senior citizens any minute now. If you close your eyes for just a couple of seconds, when you open them back up these three will have aged about 5 years. Really! That is how fast time seems to flying. It really is crazy.

These boys here are my babies. They went right off and started first grade this year. Yesterday morning while combing my boy Nate’s hair (he’s the guy with the blue shoes on the left) I was reminding him that 1st grade is quite a bit longer than kindergarten. He took a deep breath, let out a sigh and said “Well, Mom. Do you think it will be time for the sunset right when I am coming home?”

Thank heavens he gets home several hours before the sunset.

At least for a few more months, right. 🙂

This sweet boy is my nephew, Ethan. He is the same age as my twin boys and started 1st grade this year as well. He has had an amazing life so far! He was born with Sturge-Weber Syndrome.  Not only did he have a dark red birth mark over one side of his face, but his brain was riddled with calcified portions causing him to have seizures repeatedly. He had brain surgery when he was just a tiny little guy. Almost 1/3 of his brain was removed! He recovered from the surgery very well, and hasn’t had a single seizure since then. Incredible, isn’t it! He is a healthy, growing, wonderful boy.

And pretty clever if you ask me.

On the first day of school this year, his teacher asked all of the kids to stand up and introduce themselves to the class.

Ethan stood right up and said…

“My name is Charming. Prince Charming. That is what you can call me.”

And guess what. They did!

Students and teacher alike. Pretty darn cute, right. 🙂 I’d love to have a name as suave as Prince Charming, myself. Yes, I would.

A lot of fun things can happen at school. Which is why I am happy for them to have the chance to head off to another year full of great things to come. Hopefully! Crossing my fingers it’s mostly great, you never can tell with these kind of things. Or what kind of mood they will be in when they come home in the afternoon. Planning to gird myself with patience and a batch of after school cookies now and then.

Triple Chip Cookies from Jamie Cooks It Up

The cookie recipe I have to share with you all today came about mostly by accident. MyTeenSonMark had invited a bunch of friends over to “just hang out and chill, Mom. That’s what we like to do”. He asked me to make some of his favorite cookies. I ended up only having half of the ingredients on hand and threw a bunch of random things into the dough. They turned out surprisingly well and got  compliments from Mark’s friends like “These are the best cookies of my life” and…”I have never eaten this good. I’ve eaten four cookies already, don’t judge me.”

Teenagers are fun, yes?

Now, without further ramblings…let me show you how to make these cookies happen.

PS…they would make a great kid-pleasing after school snack.

Triple Chip Teenager Pleaser Cookies!

Triple Chip Teenager Pleasing Cookies
PRINT RECIPE

Time: 1 hour
Yield: 60 cookies
Recipe from Jamie Cooks It Up!

1 1/2 C butter, softened
1 1/2 C sugar
1 1/2 C brown sugar
4 eggs
2 t vanilla
3 1/2 C all-purpose flour
1 C wheat flour
3/4 C rolled oats
1 t salt
2 t baking soda
2 t baking powder
1 (10 ounce) package peanut butter chips
1 (11 ounce) package butterscotch chips
1 C semi sweet chocolate chips

1. Preheat your oven to 350 degrees.
2. Into your stand mixer or large mixing bowl place 1 1/2 cups softened butter. Add 1 1/2 cups sugar and 1 1/2 cups brown sugar. Beat the mixture until well combined, should take about 2 minutes.
3. Add 4 eggs and 2 teaspoons of vanilla. Beat for an additional 3 minutes, or until the mixture is light and fluffy.

4. Into a separate bowl add 3 1/2 cups all-purpose flour, 1 cup wheat flour, 3/4  cup rolled oats, 1 teaspoon salt, 2 teaspoon baking soda and 2 teaspoons baking powder. Toss all of the ingredients together with a fork making sure they are well incorporated.
5. Pour the dry ingredients into your stand mixer and mix until combined.

5. Grab your chips. 🙂 You need a whole package of peanut butter chips and butterscotch chips and just 1 cup of semi sweet chips.

Toss them into the mixer and mix to incorporate.

6. Roll the dough into 2 inch balls and place them on a cookie sheet you have sprayed with cooking spray.
7. Bake for 8-10 minutes, or until the tops of the cookies start to crack. You don’t want to over bake these beauties.

Take them out of the oven before they are all the way cooked and allow them to rest on the hot cookie sheet for 3-4 minutes while they finish cooking. This will give you soft, chewy cookies.

  1. Wow, they are so good! I just got my first Kitchen Aid mixer and knew immediately that these would be the first thing I made with it. They were absolutely delicious! I probably should have halved the recipe but I’m sure my husband will finish them off this week. Thanks for another family favorite!
