Magic, One Pot Italian Noodles

by Jamie

I am about to introduce you to a revolutionary kind of meal.

Why is it revolutionary? You may be wondering…

IMG_9670

Well just have a look, won’t you! See with your own eyes, that every single ingredient needed to make these fabulous Italian noodles is placed into one solitary pot…brought to a boil and left to simmer away and cook into a flavorful delight. No need to cook the noodles separately and dirty another pot. Please do not feel tempted to saute the onions and garlic in a separate pan.  No ma’am, and no sir. We have on our hands here a One Pot wonder, yes we do. These Italian Noodles are loaded with flavor. If you have made and loved the Penne Pasta with Tomatoes and Spinach recipe from my archives, this recipe reminds me a lot of that one. However, this is a little more economical because it calls for canned tomatoes.

And did I mention, it’s all cooked in one pot.

This will save you time.

Time looking for more pots, time washing more pots, time drying more pots and time putting away more pots. More time!

I knew you would be a fan, yes I did.

Let’s make it!

One Pot Italian Noodles from Jamie Cooks It Up

IMG_9653

1. Pour 4 cups broth  into a medium-sized pot. Bring it to a boil.

IMG_9658

2. Chop 1 small onion and 5 cloves garlic.

IMG_9661

3. Grab 3 cans of Italian Stewed Tomatoes.

IMG_9662

If you have diced tomatoes, that would be really awesome and preferable for this recipe. If not, just stick some cooking shears into the can and slice the tomatoes into smaller chunks.

IMG_9663

4. Once your broth has boiled add an 8 ounce package of fresh spinach, you could add more if you choose. (I hear spinach is good for you and can change your life for the better). Add the cans of tomatoes, along with the wonderful juice in the can. Toss in the onion, garlic and pasta as well.

IMG_9665

5. Sprinkle in 1/2 tablespoon basil and 1/2 tablespoon oregano.

IMG_9667

6. Hit it with 1/4 teaspoon red pepper flakes. You can adjust this, per your liking as well. Add more if you like more heat, less if heat makes you perspire and pass out cold on the kitchen floor. The 1/4 teaspoon I have listed will give it just a slight kick, nothing my kids couldn’t handle. Adjust to suit your fancy, please.

IMG_9672

This is what it should look like. Pretty! Pretty enough for a picture, I’d say.

IMG_9675

7. Bring it all to a boil over medium high heat and let it cook away, working it’s magic.

IMG_9676

The noodles will cook nicely for you, soaking up all of those wonderful flavors. Cook, just until the noodles are soft, but still have a little bite to them. Should only take about 20 minutes.

IMG_9678

Please note, the noodles will continue to soak up the broth, even after it has finished cooking. Don’t drain any of the liquid from the pan.

IMG_9680

7. Scoop the noodles out into individual bowls and sprinkle with freshly grated Parmesan cheese.

Enjoy!

I have tried a similar recipe before and it didn’t turn out well. I didn’t like the texture of the pasta and it all clumped together. It tasted really well, just weird texture. I’m willing to try it again with Jamie’s recipe for sure. 😉

Jamie, I have pinned many of your recipes, and made many, but WOW… this one looks so good and is going on the menu for this week! Thanks! So nice to have something that is so easy in this busy part of the year.

Going to try this for sure! Looks delish and easy, too. Could I just use regular spaghetti..instead of a trip to the store?

Sharon,
Yes, use whatever noodles you have on hand. 🙂 Good luck!

Gosh, I have this nasty cold thing that seems to be going around, and still have to cook. This looks like it answered my question. I have everything I need, so I am set to try this out ! Thanks.

Don’t add the noodles so early. Better if they are al dente not mushy. I have my own similar cooking method.

Can I use macaroni instead of linguine?

I made this last night and it was FABULOUS! I used chicken stock that I had made and added extra fresh basil. Next time, I will add an extra bag of spinach. It was so delicious!!!

This sounds great… but my hubby and I aren’t a fan of cooked spinach. Can you replace it with other veggies?

Reply
Char November 19, 2013 - 12:06 pm

Tara – I’m sure you can replace with some great vegetables like chopped zucchini and julienned carrots… something that cooks quickly, like the spinach would.

I don’t know if this is meant to be a vegetarian recipe, but I would add some spicy Italian sausage to this recipe for a more hearty dish, less pasta, and use petite diced tomatoes. 🙂

I bet this would also be great with a chicken breast on the side or chunked and mixed with the noodles. Can’t wait to try it. 🙂

I think I would cook pasta separately as I found it too gummy as I think I would want to rinse off starch but flavour is good

I LOVE this recipe! I was my dad’s caregiver during his last 2 1/2 years, and as he declined his taste buds were not like before, so it became more difficult to cook things he would like. THIS he LOVED! I’ve made it many times through the past 6 years and it’s always a hit.
It’s a great recipe to make a gift basket with all the ingredients except spinach & fresh cheese. I used my own home-canned herbed tomatoes instead of store-bought.

Could I use frozen spinach, as a substitute?

Reply
Jamie November 30, 2023 - 9:53 am

Hi Debbie,
Thanks for your comment. I haven’t ever tried it with frozen spinach. My thoughts are that it wouldn’t work out super well, since the spinach has already wilted down so much.
Best of luck!
~Jamie
