Creamy Honey Mustard Dressing and Dip

Can I admit a little something to you, today?

I kind of like January.

I know, I know! It’s so hum drum and blah and cold with no kind of fun holiday to look forward to or anything.

You are right, it’s all of those things.

But I love getting back into a routine.  I love that there isn’t any pressure to decorate/shop/buy/spend/etc. I love the fresh start of the new year and hoping for great things to come. I love eating a bit lighter and I love that vegetables are popular once again. Pack up the butter and bring on the grape tomatoes, I am a fan. (At least for today. I’m sure I will have something laden with butter to post for you soon. Do not worry, don’t worry at all.)

This Creamy Honey Mustard Dressing and Dip I am sharing with you today is scrumptious my friends. Made in under 10 minutes, it is fabulous drizzled over a crisp green salad or used as a dip for veggies. I have an amazing recipe that pairs perfectly with it…coming up tomorrow. Hope you’ll join me.

Now, let’s make some dressing.

Creamy Honey Mustard Dressing

1. Place 2/3 cup mayonnaise in your blender.

I love Best Foods Light, I truly do. When I open my fridge in the middle of the night to make a sandwich, and the blessed jar is empty I pace  the streets in my slippers and wonder if the end of the world is upon me. Kind of like those old Miracle Whip commercials…you know? Only they didn’t pace the streets or anything weird like that. But truly…I love this stuff. It is MUCH lower in fat than regular mayo and the flavor has a little hint of lemon. Love. Love. It.

2. Add 3 tablespoons Dijon mustard…

and 3 tablespoons honey.
3. Add 1/8 teaspoon salt, 1 tablespoon  lemon juice, 1 tablespoon white vinegar, 3 tablespoons milk and 1 tablespoon canola oil.
4. Blend it for 30 seconds or so, or until all the ingredients are well combined.

Then grab some gorgeous veggies. Do you wonder how people like you and me are able to buy beautiful looking produce like this in the middle of the winter. It is an arctic fright out there and despite it all there are vegetables to be had. 🙂 Makes a girl like me smile just a bit.

Creamy Honey Mustard Dressing or Dip

Serves: 1 Cup Prep Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 2/3 C mayonnaise (I use Best Foods Light)
  • 3 T Dijon mustard
  • 3 T honey
  • 1/8 teaspoon salt
  • 1 T lemon juice
  • 1 T white vinegar
  • 3 T milk
  • 1 T canola oil

I love January, too! It’s all clean in the house with the Christmas stuff put away, things aren’t so busy, etc. Also, mustard is one of my very favorite things in the world, so this looks like a dressing I would enjoy. Thanks!
