Meatball Sub Sandwich

I  almost decided not to post this recipe. Mostly because some of my pictures turned out weird with the meatballs looking a little bit like dog food (did I just type that!) and because the recipe is so super simple…I wondered if it would be overly obvious and not worth taking time to write about. But then I got over myself (and my meatball pictures) and reminded said self that simple recipes are a sure blessing and that many of you would be coming here today in hopes of finding a simple recipe that your family would love, gobble up and feel happy about.

And I suppose that is the bottom line, right. Wonderful tasting food that is simple to prepare = a happy cook and happy family. Even if it’s not optimal food photography material (blasted meatballs…).

We have been making these Meatball Subs all summer long, especially at Bear Lake where we often have extended family members to feed as the recipe is easy to double or triple. They come together quickly and don’t require your oven to be on for too long, just a few minutes to melt the cheese. It’s a nice hearty meal.

Meatball Sub Sandwich from Jamie Cooks It Up!

Meatball Sub Sandwiches

Time: 40 minutes
Yield: 8 servings
Recipe adapted from my sister-in-law Erin Jepsen

2 pounds Italian Style Meatballs (precooked)
1 (45 ounce) jar prego spaghetti sauce
1 loaf french bread
2 C mozzarella cheese, shredded
1 C Parmesan cheese, shredded

1. Grab some precooked Italian Style Beef Meatballs. I love these meatballs from Costco. They come in a 6 pound bag.

Pour 1/3 of the bag (about 2 pounds) into a large bowl and pop it into the microwave for about 3 minutes to thaw them just a bit.

2. Take some sharp kitchen scissors and cut each meatball in half or quarters.

3. Pour the meatballs into a large pot and pour 1 (45 ounce) jar of Prego spaghetti sauce over the top of the meatballs. Now, if you are worried about your family hating store-bought pasta sauce…keep in mind that the meatballs are going to enhance the flavor of the sauce quite a lot. Get the pot onto the stove top and bring the sauce and meatballs to a simmer. Allow the two to hang out together for about 20 minutes, stirring occasionally. You could also put the sauce and meatballs into your crock pot and let them simmer away for a few hours. The longer it simmers, the better it tastes.

4. Preheat your oven to 400.
5. Grab a large loaf of french bread.

Slice it in half, length wise.

6. Scoop the sauce and meatballs over the french bread.

7. Sprinkle 2 cups mozzarella cheese and 1 cup parmesan cheese over the top of the meatballs.

8. Wrap each sandwich in tin foil, leaving the cheesy top open, but covering the bread. This will allow the cheese to melt nicely for you and the bread to warm and get crispy without getting too dry or burning.

9. Bake in the oven just until the cheese is melted, should only take about 5 minutes.

Serve and enjoy!

YUM! My family loves these! The only thing I do different is add onion and sliced green peppers to them. We love easy meals that come together quickly like this.

i was really happy to think i was about to get another meatball sub to add to my vast collection. nope,this is just a collection of store bought ready-made items.i am an avid reader of all your post +save them for use.i’m sorry ,but this is a big letdown for me.

She admitted it was simple/obvious right from the beginning. Please don’t be negative when she takes the time to post many wonderful recipes that are very different than the ordinary. Cut the woman a break and be thankful for simplicity sometimes! 🙂

I love to cook but sometimes it is nice to have a quick to put together meal for those nights when time is short. This is one of those meals. I would like to suggest that for the print recipe function, it would be nice to have a small picture of the finished dish print to. I always like to have a picture to go with my recipes. Thanks for putting out some really great recipes.

I’m so glad you posted this recipe, Jamie, I made homemade meatballs the other night & I made way too many (as I do sometimes!). I am using the recipe as written otherwise with your technique with the tin foil around the sandwich for supper tonight when I need a fast and easy meal.
