Margarita Pizza

by Jamie

“What’s for dinner, Mom?” said a teenager who lives in this house.

“Margarita Pizza.” said I.

“Mom, we don’t drink.” was the reply.

I had to chuckle and reassured the teenager that I hadn’t added any kind of alcoholic beverage to his dinner. He was relieved.

But then I got to wondering why this amazingly simple pizza loaded with mozzarella cheese, fresh tomatoes and basil is called Margarita Pizza. It is a very important mystery, yes? As it turns out in the late 1800’s a pizza maker named Raffaele Esposito made a pizza to honour the Queen consort of Italy, Margherita of Savoy. His goal was use the colors of the Italian flag, which he did and apparently it was so well received it was blessed with Margherita’s name and has been loved by people around the world ever since.

So there you have it, a very short history lesson on the origin of Margarita Pizza. 🙂 No alcohol required.

This pizza is fantastic. The flavors are so fresh and wonderful. Hope some of you have a chance to give it a try!

1. Preheat your oven to 475.
2. Make some homemade pizza crust (recipe and tutorial found here). The dough recipe makes enough for 2 smaller (12 inch) pizzas or 1 large jelly roll pan of pizza. I opted for the full jelly roll pan for this recipe.
3. Drizzle about 2 Tb olive oil onto a large cookie sheet and set the dough onto it. Let the dough rest for 5 minutes. Don’t skip this step or the pizza will be super hard to stretch out.

4. While your dough rests make some homemade pizza sauce (recipe and tutorial here). You will only need half of the sauce for this recipe. Good news is, it freezes super well. I generally put the leftover sauce  in a quart sized ziploc bag and lay it out flat in my freezer.

5. Grab 3 tomatoes. The pizza will be much better if you use “on the vine” tomatoes or fresh garden tomatoes.

Slice the tomatoes into 1/4 inch rings.

6. Sprinkle 2 C mozzarella cheese (freshly grated, if you can) over the sauce. Lay the tomatoes out over the cheese and sprinkle with 1/4 tsp italian seasoning and bit of freshly cracked black pepper.

7. Pop it into the oven and allow it to bake for 15-20 minutes or until the crust is cooked through.

8. Grab some fresh basil…

…and spread it out evenly over the pizza. If you have any balsamic glaze hanging around, it’s super yummy drizzled on top.

Serve and enjoy!

Could I make up extra pizza dough and put some of it in the freezer?

Oh, that is beautiful, and also a beautiful history lesson. 🙂 I’m going to put my big Costco tomato vines in the ground tonight, so hopefully I’ll be all set to make this baby in another month or two. Thanks!

Looks delicious! I’m just wondering why you spelled the name of the pizza like the drink, instead of the person it’s named after as noted in your history lesson. I’ll have to give this one a try sometime…
