Have you noticed the grand affinity people have for avocado toast lately? I had never heard of it until I started using Instagram about a year and a half ago and man! People really like to share pictures of their Avocado Toast! Being a foodie at heart, of course I was eager to try my hand at it and I would like to at this very moment admit to you that I eat a piece of Avocado Toast almost every morning for breakfast. Seriously, I can’t get enough of the stuff and the varieties are endless, truly. The three I’ve chosen to share with you today are my favorites.

Fried Egg and Avocado Toast

I always start with a nice hearty piece of whole wheat bread. Prairie Grain and Aspen Mills are both brands that I love. For this Spicy Fried Egg Avocado Toast, I allow the bread to get nice and toasted (I can’t tolerate soft toast, I like mine with a good crunch to it, but please feel free to toast yours on the lighter side if you so choose.) Add sliced avocado (or you can mash it with a fork if you like a fluffier texture) an egg over easy, salt and pepper and a nice drizzle of Frank’s Buffalo Sauce. I love the combination of salty/spicy and the creaminess of the avocado and the runny egg yolk. Yum! Love it. My Handsome Husband likes to drizzle Sriracha Sauce all over his. The man is a sucker for spicy food, I can tell you that.

This particular toast makes a great (fast) breakfast and with only about 260 calories. That’s pretty light and has a lot of protein to keep you filled up. 🙂

This yummy Southwest Avocado Toast is packed with layers of flavor, but a word to the wise here. The green taco sauce really makes it wonderful. Don’t skip it, friends. You could heap it with all kinds of different toppings, but the Green Taco Sauce really keeps it together. As you can see above, along with the Green Taco Sauce I added avocado, tomatoes, salt and pepper, cilantro, fresh lime juice and black beans. Yum!

…this fabulous All Purpose Greek Seasoning. Some of you might remember this seasoning from the fantastic Greek Feta and Tomato Dip that I posted during the holidays. The seasoning is seriously, the bomb. I dream about new things I can sprinkle it on! It’s easily found at your local grocery store. I’ve seen it at Walmart and Smiths (Kroger) as well. Yum! I love it. Feta cheese would be awesome sprinkled on this toast as well. I should have thought of that when I was taking pictures, I suppose. 🙂
