Wow! Can you believe the calendar is flipping itself right over into May! I feel like time is flying by so quickly. The older I get the faster it goes. I would imagine many of you feel the same way as well. 🙂 Spring is in full force here in Utah, and it is so beautiful. We have been drinking in all of the great weather. Except for the past few days as it has been cloudy, rainy and yours truly has been sick in bed. It happens, as you know. Though I am happy to report that whilst encumbered with illness, my little boys and I watched a super fascinating documentary on The Ancient City of Petra, which I highly recommend, if you should so find yourself with ample time. Though I will warn you that if you try to portray the details of it (in great laborious clarity) to your spouse and older children when they arrive home from school they may look at you with boredom draining from their eyeballs and a look upon their faces that says “…woah, you have no life…”
Just a fair warning to you.
I have some great (pretty!) food for you this week, my friends. I couldn’t help but add something for your grill as well as some Frosted Peanut Butter Cookies that are over the top indulgent and magnificent. (Though nothing can quite compare to of the magnificence of The Ancient City of Petra. FYI. Stunning stuff, there. Truly.)
Penne Pasta with Spinach and Tomatoes
Baked Zucchini with Mozzarella
Loaded BBQ Beef Sandwiches on Homemade Sandwich Buns
Sheet Pan Sweet and Sour Chicken and Roasted Veggies
White Rice
So sorry you have not been feeling well Jamie. Hope next week is better for you!
Jamie, you always have so many yummy recipes! Can’t thank you enough. Hope you feel better soon
