Fabulous Barbeque Chicken Kabobs

Summer-time is here, ladies and gentlemen! Which means it is due time to fire up your grill and cook something wonderful. Click HERE for a list of 75 Summer BBQ Recipes. With the Memorial Day Weekend near I thought it fitting to post these Fabulous BBQ Chicken Kabobs. They are so good, gang! Seriously, they are packed with a great smoky, bacony (is that a word?) flavor, are coated in a sweet bbq sauce and would make a great addition to any backyard bbq.

Fabulous BBQ Chicken Kabobs from Jamie Cooks It Up!

Let me show you how to make it happen!

1. Pour some water in a 9×13 pan and place 10-12 wooden skewers into it. Allow them to soak for an hour or so.

2. Cut 3-4 chicken breasts (about 2 1/2 pounds) into 2 inch cubes. Place them in a medium sized mixing bowl and sprinkle 2 tsp sea salt over the top. Toss the chicken to thoroughly coat. Cover with plastic wrap and refrigerate for 30-60 minutes. This will help to both flavor the chicken and to keep it tender.

Bacon

3. Fire up your grill and heat it to 350 degrees.
4. Slice 4 strips of raw bacon into 2 inch pieces. Place them into a small mixing bowl (or food processor). Use an immersion blender (or food processor) to turn the bacon into a thick paste. Sounds weird, I know…but it really gives the chicken a ton of flavor. It’s bacon after all. King of flavor and delight. 🙂

5. Into a small bowl place 2 tsp paprika, 3 tsp smoked paprika and 5 tsp sugar. Toss them together to combine.

Pour the seasoning mixture into the bacon paste. Stir it well to combine.

6. Take a paper towel and pat the chicken dry, then spoon the seasoning/paste mixture over the chicken. Toss the chicken thoroughly to combine. I just put both my hands into the bowl and mixed and mixed it all around, until the chicken was well coated. Make sure to wash your hands (super well!) when you are done.
6. Thread the chicken pieces onto the skewers.
7. Lay a large piece of tin foil on your grill and spray it with cooking spray. Set the chicken kabobs on the foil. Cook for about 8 minutes per side. When the chicken has cooked through brush each kabob with Sweet Baby Rays BBQ Sauce. Allow them to cook for 2-3 additional minutes so the sauce has a chance to heat through.

Serve with additional BBQ Sauce.

When i tried to print the recipe, a giant smiley face emoji showed up in the middle of the recipe making it take up two pages when printing.

That problem still hasn’t been fixed. I had to copy and paste into a email to myself, then deleted the BIG FACE and printed.

We loved these kabobs, although they were much too spicy — and we’re from Texas, so we’re used to spicy foods. Do you think a milder BBQ sauce would help? Or is the heat coming from the smoked paprika, in which case we can reduce the ratio of smoked to regular paprika?

Well, this is embarrassing. Please ignore my post about the kabobs being too spicy. As it turns out, my paprika jar was filled with Cayenne pepper (purchased from the bulk food section, mislabeled as paprika). Your recipe is just fine.
